These Keto Philly Cheesesteak Rolls offer a delicious low-carb twist on the classic Philly cheesesteak sandwich, combining savory ground beef, sautéed peppers and onions, and melty Monterey Jack cheese for a flavorful, keto-friendly snack or meal.

  • Total Time: 30-35 minutes
  • Yield: 8 servings (8 rolls)

Ingredients

Cheese Circles

  • 2 cups Monterey Jack cheese (shredded)

Beef Mixture

  • 16 ounces ground beef
  • 1/2 medium onion (sliced)
  • 1 bell pepper (sliced)
  • 1 tsp Worcestershire sauce
  • 4 ounces cream cheese
  • Salt and pepper to taste

Instructions

  1. Prepare Your Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Cook the Beef Mixture: Heat a skillet over medium-high heat. Add ground beef to the hot skillet and begin breaking it apart with a spatula. Once the beef begins to brown, add the sliced onions and bell peppers. Cook until the beef is fully browned and the vegetables have softened, about 5-7 minutes. Drain excess grease from the pan to prevent soggy roll-ups.
  3. Season and Add Cheese: Return the skillet to medium heat. Add Worcestershire sauce, salt, and pepper to the beef mixture and stir to combine. Add cream cheese to the skillet and stir continuously until completely melted and incorporated. Remove the skillet from the heat and set aside.
  4. Create Cheese Circles: On your parchment-lined baking sheet, create 8 evenly spaced circles using the shredded Monterey Jack cheese, about 1/4 cup per circle. Leave at least 2 inches between each circle as the cheese will spread during baking. Place the baking sheet in the preheated oven and bake for 8-10 minutes until the edges turn golden brown and the cheese develops a lace-like appearance.
  5. Assemble the Roll-Ups: Remove cheese circles from the oven and let cool for about 1 minute until they are pliable but not too hot. Quickly place approximately 2 tablespoons of the beef mixture onto each cheese circle. Carefully roll or fold the cheese around the filling, creating a roll-up shape. Allow the roll-ups to cool for 2-3 minutes so the cheese hardens and holds the shape.

Notes

  • Slice vegetables and measure ingredients ahead of time to speed up cooking.
  • Drain excess grease thoroughly to keep rolls from becoming soggy.
  • Work quickly when shaping the cheese rolls so the cheese remains pliable.
  • Optional: Serve with sugar-free ketchup or mustard for added flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
