Ingredients
For Chicken
- 1 1/2 lb (700g) boneless skinless chicken breasts
- Kosher salt and black pepper, to taste
- 1 teaspoon oregano
- 1 teaspoon paprika
- 1 teaspoon coriander
- 2 tablespoons extra virgin olive oil
For Mushroom Sauce
- 1 tablespoon ghee or unsalted butter
- 12 ounces fresh large mushrooms, sliced
- 1/2 cup chicken broth
- 3 green onions, chopped
- 2 garlic cloves, minced
- Kosher salt and black pepper, to taste
- Parsley for garnish
Instructions
- Prepare the Oven: Preheat oven to 200°F (93°C) to keep the cooked chicken warm while preparing the sauce.
- Slice and Season Chicken: Horizontally halve the chicken breasts to make thinner cutlets. Pat them dry and season both sides with kosher salt, black pepper, and a blend of oregano, paprika, and coriander.
- Cook Chicken Cutlets: Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat until shimmering but not smoking. Add the chicken cutlets and cook for 3-4 minutes on the first side, then flip and cook another 3 minutes. Check doneness by slicing a piece to ensure it’s cooked through. Transfer chicken to an ovenproof platter and place in the warmed oven.
- Sauté Mushrooms: In the same skillet, add a little more olive oil along with the ghee or butter. Sauté sliced mushrooms for about 5 minutes until softened and browned.
- Make Mushroom Sauce: Add chicken broth, chopped green onions, minced garlic, salt, and pepper to the skillet. Bring the mixture to a boil, allowing flavors to meld and sauce to slightly reduce.
- Combine and Serve: Return the chicken cutlets to the skillet, spoon mushroom sauce over them, garnish with fresh parsley, and serve immediately for best flavor and texture.
Notes
- Using thinner chicken cutlets ensures even cooking and prevents dryness.
- Check chicken temperature with a meat thermometer; internal temperature should reach 165°F (74°C) for safety.
- Since no heavy cream is used, leftovers freeze well for future meals.
- Use ghee or butter based on preference for richer flavor in mushroom sauce.
- For a thicker sauce, reduce the chicken broth slightly or add a small pinch of cornstarch slurry if desired.
