This 3 Ingredient Creamy Yogurt Cheesecake is a simple, healthy dessert made with nonfat vanilla Greek yogurt, sweetened condensed milk, and cornstarch. It’s baked or air fried to a smooth, creamy perfection with a lightly caramelized top, making a delightful treat that’s ready in just 30 minutes and perfect for any occasion.

  • Total Time: 30-55 minutes plus chilling time
  • Yield: 8 servings

Ingredients

Cheesecake Ingredients

  • 1 2/3 cups (400 g) nonfat vanilla Greek yogurt
  • 3/4 cup (177 ml / 228 g) full fat sweetened condensed milk
  • 4 tbsp (32 g) cornstarch

Instructions

  1. Prepare the Pan: Grease the interior of a 6-inch round cake pan with cooking oil spray and then line the bottom and sides with parchment paper. Alternatively, use a 6-inch round springform pan; if nonstick, only line the bottom and grease the sides.
  2. Mix Ingredients: In a large mixing bowl, combine the nonfat vanilla Greek yogurt and sweetened condensed milk. Whisk them together until the mixture is smooth. Add the cornstarch and continue whisking rigorously until the batter is free of any lumps.
  3. Cook the Cheesecake: For air fryer method, preheat the air fryer to 315°F (157°C) and bake the batter for 23-25 minutes. Look for a puffed-up cake with a mostly set batter and caramelized spots on the surface; a toothpick inserted should come out mostly clean. For oven method, preheat the oven to 350°F (177°C) and bake for 40-45 minutes until the cake is puffed, edges turn light brown and begin to pull away from the pan sides. The surface will stay pale. A toothpick inserted should also come out mostly clean.
  4. Cool and Chill: Allow the cheesecake to cool to room temperature on a wire rack or counter. Then refrigerate for at least 1 hour to let the flavors develop and firm up the texture. For best results, chill overnight. Remove from fridge 15-30 minutes before serving to allow it to come back to room temperature for optimal creaminess and flavor.

Notes

  • Using a springform pan makes removal easier but greasing and lining the pan properly is essential to prevent sticking.
  • The air fryer method is faster and results in a slightly caramelized top, while the oven method provides a paler top but with beautifully browned edges.
  • Ensure thorough whisking of the cornstarch into the yogurt mixture to avoid lumps that affect the smooth texture.
  • Chilling the cheesecake overnight improves flavor and firmness, making slicing easier and the texture creamier.
  • Remove the cheesecake from fridge ahead of serving time to soften for a perfect creamy mouthfeel.
