Ingredients
Cheese Mixture
- 49 grams grated sharp cheddar cheese (frozen)
- 1 tbsp (6g) superfine blanched almond flour
Egg Whites
- 2 large egg whites, room temperature
Instructions
- Freeze the Cheese: Line a small baking sheet with parchment paper and spread the grated sharp cheddar cheese over it. Place it in the freezer for about 1 hour until fully frozen.
- Preheat the Oven: Set your oven to 300°F (150°C) and line a large baking sheet with parchment paper to prepare for baking the puffs.
- Process the Cheese: Once the cheese is frozen, transfer it to a small food processor and pulse a few seconds until the cheese breaks down into small crumbs similar in size to coarse crumbs.
- Whip the Egg Whites: In the bowl of a stand mixer fitted with the whisk attachment, add the room temperature egg whites and beat at medium speed until foamy (about 30 seconds). Increase speed to high and continue whipping until stiff peaks form.
- Fold Ingredients Together: Using a silicone spatula, gently fold in the pulsed cheese crumbs and almond flour into the whipped egg whites. Be careful to fold gently to retain as much air as possible in the mixture.
- Pipe the Mixture: Transfer the mixture to a piping bag fitted with a 1/4 inch opening. Pipe strips approximately 2.5 inches long onto the prepared large baking sheet, leaving some space between each strip.
- Bake the Cheese Puffs: Bake in the preheated oven for 30-35 minutes, or until the puffs turn golden and dry to the touch.
- Dry and Cool: Turn off the oven and allow the puffs to dry inside the oven with the door closed for an additional 30 minutes. Remove from oven and let them cool completely before serving.
- Storage: Store any leftovers in an airtight container in the refrigerator or freezer to maintain crispness.
Notes
- Use sharp cheddar cheese for the best flavor and texture.
- Ensure egg whites are at room temperature to whip more easily and achieve volume.
- Be gentle when folding to keep air in the mixture for a light texture.
- Cooling fully is essential for the puffs to become crisp.
- Superfine almond flour ensures a smooth, even texture—avoid coarser almond meal.
