This 30-Minute Bruschetta Chicken recipe transforms the classic Italian appetizer into a satisfying and healthy main dish. Featuring tender boneless skinless chicken breasts grilled or baked to perfection and topped with a fresh, vibrant mix of diced tomatoes, garlic, basil, and a tangy balsamic glaze, this dish captures the flavors of summer and makes for a quick, easy, and delicious dinner.

  • Total Time: 32 minutes
  • Yield: 4 servings

Ingredients

Chicken

  • 4 6-oz boneless skinless chicken breasts
  • 2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground pepper
  • 1-2 tablespoons olive oil

Bruschetta Topping

  • 3-4 medium ripe tomatoes (about 1 lb), cored, seeded, and chopped to a ½” dice
  • 1 teaspoon kosher salt
  • 2 cloves garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons balsamic vinegar
  • 2 tablespoons thinly sliced basil leaves
  • Ground pepper, to taste
  • Balsamic glaze, to taste (optional)

Instructions

  1. Prepare the bruschetta topping: In a mixing bowl, combine the chopped tomatoes with salt and minced garlic. Mix well and let it sit while you prepare and cook the chicken, allowing the flavors to meld.
  2. Pound the chicken breasts: Place one chicken breast on a sheet of parchment paper, fold the paper over the chicken, and use a rolling pin to pound it to an even thickness just under 1 inch. Repeat for all chicken breasts to ensure even cooking.
  3. Season the chicken: In a small bowl, mix Italian seasoning, kosher salt, garlic powder, onion powder, and ground pepper. Brush both sides of each chicken breast lightly with olive oil, then sprinkle evenly with the seasoning blend on both sides.
  4. Cook the chicken: You can choose to grill or bake the chicken:
    • To grill: Preheat a grill or grill pan over high heat. Place the chicken breasts on the grill grates and cook for 5-6 minutes per side or until the internal temperature reaches 165°F. Remove from grill and let rest for 5 minutes.
    • To bake: Preheat the oven to 400°F. Line a baking sheet with parchment paper, place the chicken on it, and roast for 10-12 minutes or until the internal temperature reaches 165°F. Remove from oven and let rest for 5 minutes.
  5. Finish the bruschetta topping: Stir the olive oil, balsamic vinegar, fresh basil slices, and ground pepper into the tomato mixture. Adjust seasoning with additional salt, pepper, or vinegar to your taste.
  6. Serve: Spoon the bruschetta mixture generously over each cooked chicken breast. Drizzle with balsamic glaze if desired, and serve immediately for a fresh, flavorful meal.

Notes

  • For best flavor, use fresh, ripe tomatoes and fresh basil leaves.
  • Ensure chicken breasts are pounded to even thickness to promote even cooking and prevent dryness.
  • Use an instant-read thermometer to accurately check the chicken’s doneness (165°F internal temperature).
  • Balsamic glaze is optional but adds a lovely sweet tangy finish.
  • This recipe is adaptable to both grilling and baking methods based on your kitchen setup and preferences.
