Ingredients
Sauce and Base
- 1/4 cup extra-virgin olive oil
- 6 to 8 garlic cloves, peeled and lightly crushed
- 2 pints cherry tomatoes
- 1/2 tsp. red pepper flakes (optional)
- 1 tsp. kosher salt
- 1/2 tsp. freshly cracked black pepper
- 1/2 cup heavy cream
Gnocchi and Garnish
- 2 (16-oz.) packages potato gnocchi (DeLallo brand recommended)
- 2 (4-oz.) balls fresh burrata cheese
- 1/2 cup fresh basil leaves, sliced or torn
Instructions
- Prepare the sauce: Start by bringing a large pot of salted water to a boil. Meanwhile, heat olive oil in a large skillet over medium-low heat. Add peeled and lightly crushed garlic cloves and cook until fragrant, about 2 minutes. Increase heat to medium and add cherry tomatoes. Cook, stirring occasionally, until most of the tomatoes break down and become jammy, about 10 to 12 minutes. If the garlic starts to burn at any time, reduce the heat to medium-low. Season the mixture with red pepper flakes if using, kosher salt, and freshly cracked black pepper. Reduce heat to medium-low and stir in the heavy cream to create a creamy tomato sauce.
- Cook the gnocchi: Once the water comes to a boil, add the potato gnocchi and cook according to the package instructions until al dente, typically about 2 to 3 minutes, or until they float to the surface. Before draining, reserve 1/2 cup of the pasta cooking water. Drain the remaining water.
- Combine gnocchi and sauce: Transfer the cooked gnocchi along with the reserved pasta cooking water to the skillet with the creamy tomato sauce. Toss continuously over medium-low heat until the sauce thickens and becomes glossy, about 2 minutes. Stir in the fresh basil leaves, reserving some for garnish.
- Add burrata and serve: Break the burrata balls into pieces and evenly disperse them over the gnocchi and sauce. Remove the skillet from heat and garnish with the reserved fresh basil leaves. Serve immediately while warm and enjoy the creamy texture and fresh flavors.
Notes
- Use fresh burrata for the best creamy texture contrast with the tomato sauce and gnocchi.
- Red pepper flakes are optional but add a nice gentle heat to balance the creaminess.
- If unavailable, fresh mozzarella can be substituted for burrata but will be less creamy.
- Be careful not to burn the garlic as it cooks since it is added early in the sauce preparation.
- Using the reserved pasta water helps to thin and bind the sauce nicely to the gnocchi.
- This dish is best served immediately for the freshest texture of the gnocchi and burrata cheese.
