Ingredients
Dough
- 2 1/4 cups (315g) self-rising flour
- 1 1/2 cups (370g) vanilla Greek yogurt
- 3 tbsp (35g) sprinkles
Filling
- 6-8 tbsp (78-104g) cinnamon sugar butter spread, softened
Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (177°C). Grease an 8-inch round baking pan or ceramic pie dish with non-stick cooking spray. Use a solid pan, not a springform pan, to prevent leaking of the filling during baking.
- Make the dough: In a large bowl, combine the vanilla Greek yogurt and self-rising flour. Stir with a spatula until a cohesive dough forms, then use your hands if needed. Adjust with a bit more flour if too sticky or more yogurt if too dry. Fold in the sprinkles evenly by hand.
- Roll out the dough: Lightly flour a large pastry or cutting board and rolling pin. Roll the dough into a roughly 9 x 12 inch rectangle, ensuring an even thickness for uniform rolls.
- Add cinnamon sugar butter spread: Using an offset spatula, spread 6 tablespoons of the softened cinnamon sugar butter across the dough, leaving some space near edges. If desired, add up to 8 tablespoons for a thicker filling. If dough becomes sticky when rolling, chill in the refrigerator for 15-20 minutes.
- Form the roll: Starting at the short end, roll the dough tightly into a log shape, sealing the edge with a little water if it doesn’t stick easily.
- Slice into rolls: Use kitchen twine, dental floss, or a serrated knife to cut the log into 7 even slices. Arrange the rolls spaced slightly apart in the prepared pan to allow for expansion during baking.
- Bake: Bake rolls for 30-35 minutes until puffed and lightly golden. You’ll notice bubbling butter at the bottom, which is normal and adds flavor.
- Cool and serve: Allow rolls to cool 30-40 minutes before eating. Optionally, top with frosting or icing. Rolls are best served warm and freshest soon after baking. Store leftovers in an airtight container in the refrigerator or freezer and reheat before serving.
Notes
- Use self-rising flour for best texture and rise; if unavailable, combine all-purpose flour with baking powder and salt as a substitute.
- Sprinkles add fun color and a slight sweetness—choose your favorite type.
- The cinnamon sugar butter spread should be very soft for easy spreading; you can make it by mixing softened butter with cinnamon and sugar.
- Cutting rolls with kitchen twine or dental floss creates clean slices without squishing the dough.
- Optional icing can be homemade or store-bought; a simple glaze with powdered sugar and milk pairs well.
- To store, keep rolls airtight in the fridge for up to 3-4 days or freeze for up to 1 month.
