Ingredients
Crust
- 2 cups shortbread cookie crumbs (about 20 small shortbread cookies, crushed)
- Red food coloring (to desired color)
- 6 tablespoons salted butter, melted
Cheesecake Filling
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- 2 teaspoons grated lemon peel (lemon zest)
- ½ teaspoon vanilla extract
- 2 large eggs
- Blue food coloring (to desired color)
Optional Garnish
- Whipped cream
- Sprinkles
Instructions
- Prep Oven and Muffin Tin: Preheat the oven to 350°F (175°C) and line 12 standard muffin cups with large muffin papers to prepare for the crust.
- Make and Press Crust: Combine the shortbread cookie crumbs with melted butter and red food coloring until the mixture is crumbly and evenly colored. Press this mixture firmly and evenly into the bottoms of the prepared muffin cups to form the crust layer.
- Bake Crust: Bake the crusts for 10 minutes, then remove from the oven and let them cool to set.
- Lower Oven Temperature: Reduce the oven temperature to 325°F (163°C) to prepare for baking the cheesecake filling.
- Prepare Cheesecake Batter: Using a stand or hand mixer, beat the softened cream cheese until smooth. Gradually add the granulated sugar and beat until fluffy. At low speed, mix in the lemon zest and vanilla extract. Then, at low speed, add eggs one at a time, blending gently just until combined to avoid overmixing.
- Divide Batter and Color: Evenly separate the cheesecake batter into two bowls. Leave one bowl plain (white) and add blue food coloring to the other bowl, mixing until evenly colored.
- Layer Cheesecake Batter: Using a tablespoon, gently spoon the plain (white) cheesecake batter over the cooled red crusts, smoothing the tops. Next, gently add the blue cheesecake batter on top of the white layer, smoothing the tops carefully to avoid mixing the layers.
- Bake Cheesecakes: Bake the mini cheesecakes at 325°F for 20 minutes on the middle or bottom rack, watching carefully to prevent scorching. After baking, turn off the oven, prop the door open, and leave the cheesecakes inside for an additional 10 minutes to finish setting.
- Cool and Chill: Transfer the cheesecakes to a cooling rack and allow them to cool completely for at least 30 minutes. Then refrigerate for a minimum of 3 hours or until fully chilled and set.
- Serve with Garnish: Before serving, optionally top each mini cheesecake with whipped cream and sprinkles to enhance the festive presentation.
Notes
- Use a standard muffin pan lined with large muffin papers; mini muffin pans are not suitable for this recipe.
- Be gentle when layering the blue and white cheesecake batter to maintain distinct layers.
- Allow cheesecakes to cool completely before refrigerating to prevent cracking.
- For best results, chill cheesecakes for at least 3 hours or overnight before serving.
- Optional garnish adds a festive touch but is not required.
