Ingredients
Filling
- 1 avocado, chopped
- 1 Tbsp. lime juice
- 1 cup shredded chicken
- 2 green onions, diced
- 3 Tbsp. diced red bell pepper
- 1/4 cup pickled jalapeños, diced
Assembly
- 4 egg roll wrappers
- Non-stick cooking spray
Instructions
- Prepare the Filling: In a medium bowl, toss the chopped avocado with lime juice to prevent browning and add a zesty flavor. Add shredded chicken, diced green onions, diced red bell pepper, and pickled jalapeños. Lightly toss all ingredients until well combined to create your savory filling.
- Fill the Wrappers: Lay out the egg roll wrappers on a clean, dry surface. Spoon about 1/2 cup of the chicken and avocado mixture over the bottom third of each wrapper, ensuring enough filling for a satisfying bite.
- Roll the Egg Rolls: Moisten the edges of each wrapper with water to help seal them. Fold the sides of the wrapper inward toward the center, then roll tightly from the bottom to encase the filling completely. Repeat this process with all the wrappers, keeping unused wrappers covered with a damp paper towel to prevent drying out.
- Prepare for Air Frying: Lightly spray the assembled egg rolls with non-stick cooking spray on all sides. This will help achieve a golden, crispy exterior when cooked.
- Cook in the Air Fryer: Place the egg rolls in the air fryer basket and cook at 390°F (200°C) for 5 minutes. After 5 minutes, turn them over to ensure even cooking and air fry for an additional 3-5 minutes, or until the egg rolls are crispy and golden brown.
- Serve: Slice the egg rolls in half and serve warm with your favorite dipping sauce, such as sweet chili sauce or a creamy avocado dip.
Notes
- Be sure not to overfill the wrappers to prevent tearing during rolling and cooking.
- Use non-stick spray generously to achieve crispy egg rolls.
- Keep unused wrappers covered with a damp towel to avoid drying out.
- Adjust cooking time slightly depending on your air fryer model and size of the egg rolls.
- Can be served with a variety of dipping sauces including ranch, salsa, or sour cream.
