Ingredients
Potatoes
- 2 large russet potatoes
Seasoning Mix
- 1 tablespoon granulated sugar
- 2 teaspoons smoked paprika
- 2 teaspoons Kosher salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon red pepper flakes
Oil
- 3 tablespoons avocado oil (or other neutral oil)
Instructions
- Prepare the Potatoes: Scrub the potatoes thoroughly and cut them into quarter-inch sticks. Place the cut potatoes into a bowl filled with cold water to remove excess starch and prevent browning.
- Make the Spice Mix: In a separate bowl, whisk together the sugar, smoked paprika, Kosher salt, black pepper, garlic powder, onion powder, dried oregano, dried thyme, and red pepper flakes until well combined.
- Preheat Air Fryer: Set your air fryer to 400°F (200°C) and allow it to preheat for a few minutes to ensure even cooking and crispiness.
- Season the Potatoes: Drain the potatoes from the water and pat them completely dry with a clean towel. Place the dried potato sticks in a bowl, add the avocado oil and about three-fourths of the prepared spice mix, then toss thoroughly to coat evenly.
- Air Fry the Fries: Spread the seasoned potato sticks evenly in the air fryer basket. Cook for 15 to 18 minutes, stirring or shaking the basket once halfway through the cooking time to ensure even crisping.
- Increase Crispiness: If the fries are not crispy enough to your liking, increase the air fryer temperature to 425°F (220°C) and continue cooking for an additional 3 to 5 minutes, watching carefully to avoid burning.
- Final Seasoning: Once cooked, transfer the fries to a bowl, sprinkle with the remaining spice mix, and toss gently to add the final burst of flavor before serving.
Notes
- Soaking the potatoes in cold water helps remove starch and enhances crispiness.
- Patting the potatoes dry is crucial to prevent sogginess and ensure crisp fries.
- You can adjust the red pepper flakes according to your desired spice level.
- Use a neutral oil with a high smoke point such as avocado oil for best results.
- If your air fryer basket is small, cook the fries in batches to avoid overcrowding.
- These fries are best served immediately for maximum crispness.
