Ingredients
Chicken
- 2 lbs chicken thighs, cut into cubes
Marinade
- 1/3 cup ketchup
- 1/4 cup brown sugar
- 1.5 teaspoons onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Other
- Olive oil cooking spray
Instructions
- Prepare the marinade: In a small bowl, combine ketchup, brown sugar, onion powder, garlic powder, cayenne pepper, salt, and black pepper. Stir well until all ingredients are fully incorporated to create a smooth marinade.
- Marinate the chicken: Place the cubed chicken thighs into a medium bowl or a large ziplock bag. Pour the marinade over the chicken and mix thoroughly to ensure each piece is evenly coated. Let the chicken marinate for at least 15 minutes to absorb the flavors.
- Preheat the air fryer basket: Spray the air fryer basket lightly with olive oil cooking spray to prevent sticking. Arrange the chicken pieces in a single layer inside the basket, making sure they do not crowd or overlap for even cooking.
- Air fry the chicken: Cook the chicken bites at 380°F (193°C) for 9 to 11 minutes, checking that the internal temperature reaches 165°F (74°C) to ensure they are safely cooked. Cooking times may vary depending on your air fryer model and the size of the chicken pieces.
- Cook remaining batches: Remove the cooked chicken and repeat the process with any remaining pieces, always spraying the basket before each new batch to avoid sticking.
- Serve and enjoy: Once all batches are cooked, serve the hot, crispy chicken bites immediately. They make an excellent appetizer or snack.
Notes
- Do not overcrowd the air fryer basket to ensure even cooking and crispiness.
- Check the chicken’s internal temperature with a meat thermometer to avoid undercooking.
- If you prefer less spice, reduce or omit the cayenne pepper.
- Use chicken thighs for juicier bites; chicken breast can be used but may be less moist.
- Marinating time can be extended to up to 2 hours for deeper flavor infusion.
- Leftover chicken bites can be refrigerated and reheated in the air fryer for best texture.
