Ingredients
Main Ingredients
- 2 lb Ground chicken
- 1 Medium Onion (peeled, cut into chunks)
- 1 Green chilli (stem removed)
- 2 tbsp Ginger & garlic paste
- 1 tbsp Garam masala
- 1 tbsp Chaat masala
- 1/2 tbsp Kashmiri chilli powder
- 1/2 tbsp Sugar
- 2 tbsp Chickpea (gram) flour
- 1/4 cup Cilantro (optional)
- 2 1/2 tsp Sea salt
Instructions
- Prepare the seasoning paste: Add the onion chunks, green chili, ginger & garlic paste, garam masala, chaat masala, Kashmiri chilli powder, sugar, cilantro (if using), and sea salt into a blender. Blend the mixture until smooth to create a flavorful seasoning paste.
- Combine the mixture: In a large bowl, gently mix the ground chicken, chickpea flour, and the seasoning paste together just until they are completely combined. Avoid overmixing to keep the kebabs tender.
- Marinate the kebab mixture: Cover the bowl tightly with plastic wrap and refrigerate for at least one hour. This helps the mixture firm up and allows the flavors to meld beautifully.
- Shape the kebabs: After resting, take a portion of the meat mixture and form a ball. Insert a skewer through the center and use your hands to shape the mixture evenly around the skewer into a long, cylindrical kebab shape.
- Air fry the kebabs: Preheat your air fryer to 425°F (220°C). Place the shaped kebabs in the air fryer basket in a single layer and lightly spray them with cooking oil spray. Air fry for 17-20 minutes, flipping the kebabs halfway through cooking to ensure even browning.
- Optional smoky flavor: For an authentic smoky taste, place a charcoal brick inside a foil bowl and heat it over a gas stove or barbecue lighter until white ash forms. Immediately place the kebabs in a skillet, set the hot foil bowl in the center, drizzle a small amount of ghee on the charcoal, cover with a lid, and let smoke for 3-5 minutes before serving.
Notes
- Do not overmix the meat mixture to prevent tough kebabs.
- Use cooking oil spray to achieve crispiness without added oil.
- The charcoal smoking step is optional but enhances the authenticity and flavor.
- Serve with naan, chutneys, or salad for a complete meal.
- Ensure kebabs are cooked through with an internal temperature of 165°F for safety.
