These Air Fryer Stuffed Chicken Breasts are juicy, tender, and packed with a flavorful blend of spices and a cheesy filling. Perfect for a quick, low-carb, and keto-friendly meal that delivers a delicious combination of creamy cheese and perfectly cooked chicken.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

Chicken and Seasoning

  • 4 (4-6 oz each) chicken breasts
  • 2 Tablespoons oil of choice
  • ½ teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt

Cheese Filling

  • 4 oz cream cheese, at room temperature
  • ¼ cup Parmesan cheese
  • ¼ cup mozzarella cheese or favorite cheese
  • Optional add-in: 2 Tablespoons chopped sundried tomatoes, or pesto, or feta, or green chilis, or 1 cup chopped spinach

Instructions

  1. Preheat the Air Fryer: Preheat your air fryer to 375ºF to ensure it’s hot and ready for cooking the chicken breasts evenly and perfectly.
  2. Prepare the Seasoning Mixture: In a small bowl, mix together the oil with Italian seasoning, garlic powder, chili powder, black pepper, and salt. Set this aside to brush on the chicken later for seasoning and moisture.
  3. Make the Cheese Filling: In another bowl, combine the cream cheese, Parmesan, and mozzarella. Stir in your choice of optional add-ins such as sun-dried tomatoes, pesto, feta, green chilis, or chopped spinach for extra flavor.
  4. Prepare the Chicken Breasts: Lay each chicken breast flat on a cutting board. Carefully slice about three-quarters of the way through each breast—do not cut all the way through to create a pocket for the filling.
  5. Stuff the Chicken: Spoon a quarter of the cheese mixture into each chicken breast pocket. Fold the chicken over the filling, pressing gently to seal it inside.
  6. Season the Chicken: Brush all sides of each stuffed chicken breast with the oil and seasoning mixture prepared earlier to add flavor and help create a crispy exterior.
  7. Air Fry the Chicken: Place the stuffed breasts in the air fryer basket. Cook for 20 minutes, flipping them halfway through. The chicken is done when the internal temperature reaches 165ºF and the outside is golden and cooked through.

Notes

  • Use a sharp knife to safely create the pockets in the chicken breasts without cutting all the way through.
  • Make sure the cream cheese is at room temperature for easier mixing.
  • Flip the chicken halfway through cooking to ensure even browning and cooking.
  • Check the internal temperature with a meat thermometer to guarantee doneness and safety.
  • Customize the cheese filling with different add-ins to suit your taste preferences.
