  • Total Time: 2 hours 30 minutes
  • Yield: 7 servings

Ingredients

Braised Chicken and Stock

  • 2 tablespoons olive oil
  • 2 split chicken breasts (about 1 ½ pounds total)
  • ½ roughly chopped yellow onion
  • 1 roughly chopped carrot
  • 1 roughly chopped rib of celery
  • 2 smashed garlic cloves
  • 1 gallon water
  • 4 to 6 sprigs of parsley
  • 1 bay leaf
  • 2 teaspoons dry oregano

Sauce

  • 3 thick slices of white bread (cut into 1” cubes)
  • 8 cups braised chicken stock (from above)
  • 1 teaspoon cumin seeds (or ground)
  • 2 tablespoons olive oil
  • 1 peeled, small diced small red onion
  • 2 seeded, large diced yellow bell pepper
  • 1 seeded, large diced serrano pepper
  • 1 seeded, large diced Fresno pepper
  • ¼ cup pecans
  • 3 thinly sliced garlic cloves
  • 2 teaspoons aji panca (Peruvian red pepper paste)
  • 12 ounces evaporated milk
  • ¼ cup grated Parmigiano Reggiano
  • 3 tablespoons unsalted butter
  • ¼ teaspoon ground nutmeg
  • Salt and pepper to taste

To Serve

  • Garlic rice (optional)
  • Hard boiled eggs, shelled and quartered
  • ½ cup pitted black olives
  • 4 large peeled, boiled, and thickly sliced Yukon potatoes

Instructions

  1. Prepare Braised Chicken: Heat 2 tablespoons olive oil in a large pot over medium-high heat until it lightly smokes. Add the split chicken breasts skin-side down and sear for 3 to 4 minutes per side until golden brown. Optionally add backbone and wings for extra flavor. Remove chicken and set aside.
  2. Sauté Aromatics: In the same pot, add chopped yellow onion, carrot, celery, and smashed garlic cloves. Sauté for 3 to 4 minutes until edges start to brown, developing flavor.
  3. Simmer Chicken Stock: Pour in 1 gallon of water, season with salt and pepper. Return browned chicken pieces along with parsley sprigs, bay leaf, and oregano to pot. Simmer over low to medium heat for 70 minutes to create rich chicken stock.
  4. Strain Stock and Remove Chicken: Remove chicken pieces and set aside. Strain the stock through a fine mesh strainer or chinois to remove solids. Reserve 8 cups for the sauce; freeze any leftover stock for future use.
  5. Soak Bread: Place bread cubes in a bowl and cover with 3 to 3½ cups of the warm chicken stock. Allow bread to soak completely to soften.
  6. Toast and Grind Cumin: In a large sauce pot over low heat, toast cumin seeds for 2 to 3 minutes until very aromatic. Remove and grind them finely using mortar and pestle or grinder.
  7. Sauté Onions: In the same sauce pot over medium heat, add 2 tablespoons olive oil and the diced small red onion. Season lightly with salt and sauté for 5 minutes until starting to brown. Reduce heat to low and cook for an additional 8-10 minutes, stirring occasionally, to develop sweetness.
  8. Add and Cook Peppers: 5 minutes before onions finish, add diced yellow bell pepper, serrano, and Fresno peppers. Season lightly and cook for 5 minutes until pepper edges turn lightly brown but still retain some bite.
  9. Toast Garlic and Pecans: Stir in sliced garlic cloves and pecans, cooking for 1 to 2 minutes to gently toast and enhance flavors.
  10. Add Spices and Stock: Stir in the ground cumin, aji panca, and 3 cups of reserved chicken stock. Season with salt and let the mixture cook down over low to medium heat for 8 to 10 minutes to concentrate flavors.
  11. Add Soaked Bread: Incorporate the soaked bread and stir well to combine into the sauce base.
  12. Blend Sauce: Transfer the sauce mixture to a blender (without the center cap) and blend on high until completely smooth. Adjust consistency with more stock if too thick; the sauce should be creamy and thick.
  13. Finish Sauce: Return blended sauce to pot and stir in evaporated milk, grated Parmigiano Reggiano, butter, ground nutmeg, salt, and pepper. Keep the sauce warm over low heat.
  14. Shred Chicken: Remove the skin and bones from the cooked braised chicken breasts. Shred the chicken meat by hand into bite-sized pieces.
  15. Combine Chicken and Sauce: Add the shredded chicken to the sauce and mix thoroughly to coat all pieces. Optionally, squeeze in 1 to 1½ tablespoons of fresh lemon juice to brighten flavors.
  16. Serve: Plate the Aji De Gallina with garlic rice, boiled sliced Yukon potatoes, quartered hard-boiled eggs, and black olives on the side for a classic presentation.

Notes

  • For deeper flavor in stock, include chicken backbone and wings when simmering if available.
  • Adjust aji panca quantity depending on preferred spice level; it adds smoky and fruity heat.
  • Use white, crustless bread to achieve a smoother sauce texture.
  • Evaporated milk provides creaminess without overpowering richness; substitute with whole milk if unavailable but expect thinner sauce.
  • The sauce can be prepared in advance and gently reheated; add stock as needed to maintain creamy consistency.
  • Serve immediately after assembling to preserve sauce texture and avoid drying out the chicken.
