Ingredients
Stuffed Chicken
- 2 boneless, skinless chicken breasts
- 1 honeycrisp apple, cored and thinly sliced
- 1 wedge of brie cheese, sliced
- Salt and pepper, to taste
Maple Glaze
- 2 tablespoons maple syrup
- 1 teaspoon Dijon mustard
- ¼ teaspoon dried thyme
- 1 garlic clove, minced
Instructions
- Prepare the glaze: In a small bowl, whisk together the maple syrup, Dijon mustard, dried thyme, and minced garlic until well combined. Set aside.
- Preheat the oven: Set your oven to 400°F (204°C) so it’s ready for roasting the chicken later.
- Prepare the chicken breasts: Place the chicken breasts flat on a cutting board and carefully slice a slit into each breast about three-quarters of the way through, creating a pocket for the filling. Season both sides generously with salt and pepper.
- Sear the chicken: Heat a large cast iron skillet over medium-high heat and add a splash of olive oil. Once hot, add the chicken breasts and sear for 2 to 3 minutes on each side until golden brown. Remove the chicken from the skillet.
- Stuff the chicken: Fill each seared chicken breast pocket with the thinly sliced honeycrisp apples and slices of brie cheese. If desired, secure with toothpicks to keep the filling in place.
- Apply the glaze: Place the stuffed chicken breasts back into the cast iron skillet and brush the maple glaze generously over the top of each breast.
- Bake the chicken: Transfer the cast iron skillet to the preheated oven and roast the chicken for 20 to 22 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Serve immediately: Remove the chicken from the oven, let rest briefly, then serve hot as a delicious main course.
Notes
- Use a sharp knife to carefully slice the chicken breasts to avoid cutting all the way through.
- If you prefer, secure the stuffed chicken breasts with toothpicks to prevent filling from spilling out during cooking.
- Check internal temperature with a meat thermometer to ensure the chicken is safely cooked.
- Feel free to swap honeycrisp apples with other sweet varieties like Fuji or Gala for different flavor nuances.
- Leftover chicken can be refrigerated in an airtight container for up to 2 days.
