This Apple and Brie Stuffed Chicken recipe combines tender, juicy chicken breasts with the sweet crispness of honeycrisp apples and the creamy richness of brie cheese. Finished with a flavorful maple glaze infused with Dijon mustard, garlic, and thyme, this elegant yet easy-to-make dish is perfect for a comforting American-style dinner.

  • Total Time: 40 minutes
  • Yield: 2 servings

Ingredients

Stuffed Chicken

  • 2 boneless, skinless chicken breasts
  • 1 honeycrisp apple, cored and thinly sliced
  • 1 wedge of brie cheese, sliced
  • Olive oil, for searing
  • Salt, to taste
  • Black pepper, to taste
  • Paprika, to taste

Maple Glaze

  • ¼ cup maple syrup
  • 2 tsp Dijon mustard
  • ½ tsp dried thyme
  • 1-2 garlic cloves, minced

Instructions

  1. Preheat the oven: Preheat your oven to 400 degrees Fahrenheit to prepare for finishing the chicken in a hot oven.
  2. Make the glaze: In a small bowl, whisk together the maple syrup, Dijon mustard, minced garlic, and dried thyme until well combined. Set aside to let the flavors meld.
  3. Prep the chicken: Place the chicken breasts on a cutting board and carefully cut a slit into each one about ¾ of the way through to create a pocket. Season both sides generously with salt, black pepper, and a light sprinkle of paprika to enhance the flavor.
  4. Sear, stuff, and glaze: Heat a splash of olive oil in a large oven-safe skillet or cast iron pan over medium-high heat. Once hot, add the chicken breasts and sear for 2-3 minutes per side until golden brown. Remove the skillet from heat and stuff each chicken breast with 3 slices of brie and 4-5 slices of apple. You can secure the opening with toothpicks if desired. Arrange the remaining apple slices around the chicken in the pan. Brush the maple glaze generously over each chicken breast.
  5. Bake: Transfer the skillet to the preheated oven and bake the chicken for 20-22 minutes, or until the chicken reaches an internal temperature of 165°F, ensuring it is fully cooked but still juicy.
  6. Serve: Remove the chicken from the oven and serve immediately, drizzling any extra glaze from the pan over the top for added flavor and moisture.

Notes

  • You can substitute honeycrisp apples with any other sweet and crisp apple variety like Fuji or Gala.
  • If you don’t have a cast iron skillet, sear the chicken in a regular skillet and transfer to a baking dish before baking.
  • Using toothpicks helps keep the filling intact while baking but is optional.
  • Make sure the chicken is cooked to an internal temperature of 165°F for safe consumption.
  • Leftover chicken makes great cold or reheated lunches.
