Ingredients
Dry Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
Sugars & Spices
- ½ cup brown sugar
- 1 ½ teaspoons ground cinnamon
- ½ cup granulated sugar
Wet Ingredients
- 2 large eggs, room temperature
- ½ cup butter, melted
- 1 teaspoon vanilla extract
Fruit
- 2 cups chopped apples (Pink Lady, Gala, or Honeycrisp – peeled and chopped, about 2 apples)
Instructions
- Prepare Pan: Preheat oven to 350°F. Grease and flour an 8 x 5 inch loaf pan or line it with parchment paper. Set aside.
- Mix Cinnamon Sugar: In a small bowl, whisk together the brown sugar and ground cinnamon. Set aside for layering.
- Combine Eggs and Sugar: In a large mixing bowl, whisk the eggs and granulated sugar together until smooth and well combined.
- Add Wet Ingredients: Stir in the melted butter and vanilla extract until the mixture is smooth and homogenous.
- Incorporate Dry Ingredients: Add the flour, baking powder, baking soda, and salt to the wet mixture. Stir gently until just combined. The batter will be thick; avoid overmixing.
- Fold in Apples: Gently fold the chopped apples into the batter, ensuring even distribution without breaking the pieces.
- Layer Batter and Cinnamon Sugar: Pour half of the batter into the prepared loaf pan, spreading evenly. Sprinkle about three-quarters of the cinnamon sugar mixture over this layer.
- Top Batter and Swirl: Carefully spread the remaining batter on top of the cinnamon sugar layer. Sprinkle the remaining cinnamon sugar over the top, then gently swirl it into the top layer using a knife or spoon to create a marbled effect.
- Bake: Bake for 35 to 45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs. If the bread begins to brown too quickly, tent it with aluminum foil for the last 10 to 15 minutes to prevent burning.
- Cool and Serve: Allow the bread to cool completely in the pan before slicing. This helps retain moisture and ensures clean slices. Serve and enjoy!
Notes
- You can substitute Granny Smith apples for a tarter flavor if preferred.
- Ensure eggs are at room temperature for better mixing and texture.
- For an extra crunch, sprinkle chopped nuts like walnuts or pecans between the layers.
- This bread can be stored in an airtight container at room temperature for up to 3 days, or frozen for up to 3 months.
- Use parchment paper for easier removal and cleanup.
- Adjust cinnamon quantity according to your spice preference.
