Ingredients
Dry Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 cup granulated sugar
- 2 tsp apple pie spice
- 1 tsp salt
Wet Ingredients
- 1/2 cup apple cider
- 1/4 cup milk, room temperature
- 2 eggs, room temperature
- 2 tbsp oil
- 1/4 cup unsalted butter, melted
Topping
- 1 tsp apple pie spice
- 3/4 cup granulated sugar
Instructions
- Preheat oven and prepare pan: Preheat the oven to 350°F (175°C) and line a muffin pan with paper liners to prevent sticking and make removal easy.
- Mix dry ingredients: In a large bowl, combine 2 cups all-purpose flour, 2 tsp baking powder, 1 cup granulated sugar, 2 tsp apple pie spice, and 1 tsp salt, ensuring the mixture is evenly blended.
- Whisk wet ingredients: In a separate bowl, whisk together 1/2 cup apple cider, 1/4 cup room temperature milk, 2 room temperature eggs, 2 tbsp oil, and 1/4 cup melted unsalted butter until smooth.
- Combine wet and dry mixtures: Pour the wet mixture into the dry ingredients and gently stir to form a batter. Be careful not to overmix, to keep the muffins tender.
- Fill muffin cups: Spoon the batter into the muffin cups, filling each about two-thirds full for proper rising.
- Bake: Bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool muffins: Let the muffins rest in the pan for 5 minutes to firm up, then transfer them to a wire rack to cool completely to avoid sogginess.
- Prepare topping: In a small bowl, mix 3/4 cup granulated sugar with 1 tsp apple pie spice.
- Apply topping: Dunk the tops of the cooled muffins in melted butter so the spiced sugar adheres well.
- Add spiced sugar coating: Dip the buttered muffin tops into the spiced sugar mixture, coating them fully for a sweet, crunchy finish.
- Serve and enjoy: Your apple cider muffins are now ready to be enjoyed warm or at room temperature as a comforting treat.
Notes
- Use room temperature eggs and milk to ensure even mixing and better texture.
- Do not overmix the batter to keep muffins light and fluffy.
- You can substitute apple cider with fresh apple juice if cider is unavailable.
- Store muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage.
- For a dairy-free option, substitute milk and butter with plant-based alternatives.
