  • Total Time: 2 hours 10 minutes
  • Yield: 12 servings

Ingredients

Dough Ingredients

  • 2 ¼ teaspoons active dry yeast
  • 1 cup milk (warmed to 90-100°F)
  • ½ cup granulated sugar
  • ⅓ cup unsalted butter (softened)
  • 1 teaspoon salt
  • 2 large eggs
  • 4 cups all-purpose flour

Filling Ingredients

  • 2 large Granny Smith apples (diced)
  • 1 tablespoon plus 1 teaspoon cinnamon, divided
  • ½ cup salted butter plus 2 tablespoons (divided)
  • 1 cup brown sugar plus 1 tablespoon

Pouring and Topping Ingredients

  • ⅓ cup heavy cream

Cream Cheese Icing

  • ½ cup salted butter (softened)
  • 4 oz cream cheese
  • 1 ¾ cups powdered sugar
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • ½ teaspoon apple pie spice

Instructions

  1. Make the Dough: Warm the milk to about 90-100°F and dissolve the active dry yeast in it. Cover and let it sit for 5 minutes until frothy. In a large mixing bowl, combine the frothy yeast mixture with granulated sugar, softened butter, salt, and eggs.
  2. Mix and Knead: Gradually add the flour, one cup at a time, mixing until a dough forms. Knead the dough on a lightly floured surface for 2-5 minutes until it’s smooth and elastic.
  3. First Rise: Place the dough in a covered bowl and let it rise for 1 hour or until doubled in size.
  4. Roll Out Dough: On a lightly floured surface, roll the dough into a 21×16-inch rectangle.
  5. Prepare Filling: While the dough rises, sauté diced apples in a medium pan over medium-high heat with 2 tablespoons of butter and 1 teaspoon cinnamon for 4-5 minutes until soft. In a medium bowl, mix softened butter, 1 cup brown sugar, and 1 tablespoon cinnamon until combined.
  6. Spread Filling: Evenly spread the butter, cinnamon, and sugar mixture over the rolled-out dough, then sprinkle the cooked apples on top.
  7. Shape Rolls: Starting from one long edge, tightly roll the dough into a log. Using a sharp knife, cut the log into 12 equal rolls approximately 1 ½ inches wide.
  8. Second Rise: Place the rolls cut-side up in a prepared baking pan. Cover with plastic wrap and let them rise for 30 minutes until puffy.
  9. Preheat Oven and Add Cream: While rolls are rising, preheat the oven to 400°F (200°C). After rising, pour the heavy cream evenly over and around the rolls in the pan.
  10. Bake Rolls: Bake for 20-25 minutes or until golden brown on top and cooked through.
  11. Make Cream Cheese Icing: While rolls bake, beat softened butter and cream cheese together until smooth. Gradually add powdered sugar ½ cup at a time, mixing until well combined. Mix in vanilla extract, salt, and apple pie spice until the icing is smooth and creamy.
  12. Finish and Serve: Allow the baked cinnamon rolls to cool for 5 minutes, then spread the cream cheese icing evenly over the warm rolls. Serve immediately for best flavor and texture.

Notes

  • Make sure the milk is warm but not hot when activating the yeast to prevent killing the yeast.
  • Use Granny Smith apples for tartness that balances the sweet filling and icing.
  • The cream poured over the rolls before baking helps keep them moist and adds richness.
  • Letting the rolls rise twice ensures a light and fluffy texture.
  • The apple pie spice in the icing enhances the flavor and ties the whole dessert together.
  • These rolls are best enjoyed fresh but can be reheated gently to soften.
