These Apple Pie Rice Paper Dumplings are a delightful fusion of classic apple pie flavors wrapped in delicate, crispy rice paper. Perfect as a dessert or snack, they offer a crispy exterior with a sweet, spiced apple filling inside, air-fried to golden perfection and finished with a cinnamon sugar coating. A vegan and gluten-free treat that’s simple to prepare and sure to impress.

  • Total Time: 30 minutes
  • Yield: 4 dumplings (serves 2 people)

Ingredients

Apple Pie Filling:

  • 2 apples, sliced into 1 inch pieces (peeled optional)
  • 2 tbsp coconut sugar
  • 1 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 tsp arrowroot starch
  • 1 tsp coconut oil

Remaining Ingredients:

  • 8 rice paper sheets
  • Avocado oil or coconut oil spray (or brush-on oil alternative)
  • 2 tbsp coconut sugar (for coating)
  • 1/2 tsp cinnamon (for coating)

Instructions

  1. Prepare the Apple Pie Filling: In a bowl, combine the sliced apples, coconut sugar, maple syrup, cinnamon, nutmeg, arrowroot starch, and coconut oil. Mix everything together until well incorporated.
  2. Cook the Filling: Transfer the mixture to a sauté pan over medium heat. Cook for 5 to 10 minutes, stirring occasionally, until the apples are tender and the filling thickens slightly. Remove from heat and let cool for a few minutes.
  3. Soak the Rice Paper: Fill a large shallow plate with water. Dip one rice paper sheet into the water, ensuring it is fully coated, for about 5 seconds. Remove and place it on a clean dry plate or work surface.
  4. Assemble the Dumplings: Place about 1/2 cup of the apple pie filling in the center of the rice paper in a rectangular shape. Fold the bottom edge of the rice paper over the filling, then fold both sides inward over the filling, and finally fold the top edge to seal, forming a dumpling.
  5. Wrap with Second Layer: Repeat the soaking process with another rice paper sheet and place it on a clean plate. Wrap the dumpling you just made with this second rice paper layer for extra sturdiness. Repeat assembly with the remaining filling to make about 4 dumplings.
  6. Prepare for Air Frying: Spray both sides of each dumpling with avocado or coconut oil spray. If you don’t have a spray, brush oil evenly on both sides.
  7. Air Fry the Dumplings: Place the dumplings in the air fryer basket and cook at 400°F (204°C) for 6 minutes. Flip each dumpling carefully using tongs and air fry for an additional 6 minutes until they are golden brown and crispy.
  8. Coat with Cinnamon Sugar: Mix 2 tablespoons of coconut sugar with 1/2 teaspoon of cinnamon on a plate. While the dumplings are still warm, roll or sprinkle them in the cinnamon sugar mixture to coat evenly.
  9. Serve: Allow dumplings to cool for a few minutes. Cut each dumpling in half with a sharp knife and serve as a dessert or snack, optionally alongside dairy-free vegan ice cream for an extra indulgence.

Notes

  • Peeling the apples is optional depending on your texture preference.
  • Ensure rice paper sheets are softened sufficiently but not overly soaked to prevent tearing during folding.
  • The arrowroot starch helps thicken the filling and improves its texture.
  • You can substitute coconut sugar with brown sugar if preferred.
  • Use a tongs carefully when flipping dumplings to avoid breakage.
  • For best results, serve dumplings warm and enjoy immediately with ice cream.
