Ingredients
Salad
- 3-4 cups fresh baby spinach
- 1 medium honey crisp apple
- ¼-⅓ cup dried cranberries
- ½ cup crumbled feta cheese
- 3 tablespoons chopped candied pecans (store-bought or homemade)
Maple Dijon Dressing
- ¼ cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon pure maple syrup
- 1 teaspoon Dijon mustard
- ¼ teaspoon sea salt
- ⅛ teaspoon black pepper
Instructions
- Prepare the dressing: Combine the extra virgin olive oil, red wine vinegar, pure maple syrup, Dijon mustard, sea salt, and black pepper in a mason jar and shake well until emulsified. Alternatively, whisk all the ingredients in a bowl until fully combined. For extra flavor, add a finely minced small clove of fresh garlic to the dressing and mix well.
- Prepare the salad ingredients: Thinly slice the honey crisp apple for an elegant presentation, or slice and chop it into bite-sized pieces for easier eating. Place the fresh baby spinach in a large mixing bowl.
- Toss the salad: Pour half of the prepared dressing over the spinach and toss well to coat evenly. Then add the sliced apples, crumbled feta cheese, dried cranberries, and chopped candied pecans to the bowl.
- Combine and adjust seasoning: Gently toss all ingredients together to blend the flavors. Taste and add extra salt, pepper, or dressing as desired.
- Serve: Plate the salad and serve immediately with the remaining dressing on the side for added flavor. Enjoy fresh for the best texture and taste.
Notes
- Use honey crisp apples for the best balance of sweetness and tartness in the salad.
- Candied pecans can be store-bought or homemade; they add a nice crunch and sweetness to the dish.
- The dressing can be prepared ahead and stored in the refrigerator for up to 3 days.
- Add minced fresh garlic to the dressing if you enjoy a garlicky kick.
- Serve immediately after tossing to prevent the spinach and apples from wilting or browning.
- For a nut-free option, omit the candied pecans or substitute with toasted seeds.
