This easy apple tart recipe uses store-bought puff pastry filled with thinly sliced Honeycrisp apples, lightly sweetened with brown sugar, lemon juice, and vanilla extract. Topped with melted apricot jam and butter, it comes together quickly for a delicious, visually impressive dessert perfect for any occasion.

  • Total Time: 49 minutes
  • Yield: 8 servings

Ingredients

For the Puff Pastry Base

  • 1 sheet puff pastry
  • 3 tablespoons apricot jam, melted, divided

For the Apple Filling

  • 4 medium Honeycrisp apples, cored and sliced into ¼-inch thickness
  • 3 tablespoons light brown sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons vanilla extract
  • 2 tablespoons butter, cubed small

Instructions

  1. Preheat Oven: Set the oven temperature to 400°F to ensure it’s hot and ready for baking your tart.
  2. Prepare Puff Pastry: Roll out the puff pastry sheet larger than a 9-inch tart pan if necessary. Gently press it into the tart pan, pushing it up the sides, then trim any excess pastry. Use a fork to poke holes in the bottom to prevent bubbling during baking. Brush 1 tablespoon of melted apricot jam evenly over the pastry base. Place the tart pan in the fridge to keep the pastry chilled while preparing the filling.
  3. Toss Apple Slices: In a large bowl, combine the sliced apples with light brown sugar, lemon juice, and vanilla extract, tossing well so each slice is coated evenly with the mixture.
  4. Arrange Apples: Begin placing the apple slices around the edge of the pastry in a circular pattern, slightly overlapping each piece. Proceed to fill the center with another layer of apple slices, arranging them to create a pleasing design. Add a second layer of apple slices around the edges and center to build volume and texture.
  5. Add Butter and Juices: Pour any leftover apple-juice mixture over the arranged apples for added moisture and flavor. Dot the top of the tart with small cubes of butter to enrich the tart while baking.
  6. Bake the Tart: Position the tart pan on a baking sheet to catch any drips and bake in the preheated oven for 35 to 40 minutes, or until the puff pastry is golden and puffed, and the apples are tender.
  7. Finishing Touch: Remove the tart from the oven and immediately brush the top with the remaining 2 tablespoons of melted apricot jam to give the tart a glossy, beautiful finish. Allow it to cool slightly before serving.

Notes

  • Using Honeycrisp apples enhances the tart’s sweetness and texture, but Granny Smith or Fuji apples are good alternatives.
  • Make sure the puff pastry is well chilled before baking to achieve a flaky, golden crust.
  • Use a baking sheet under the tart pan to avoid any spills in your oven.
  • Serve warm with a scoop of vanilla ice cream or whipped cream for an indulgent dessert.
  • Leftover tart can be stored in an airtight container in the refrigerator for up to 3 days.
