These Applesauce Muffins are moist, tender, and lightly spiced treats that offer a delicious way to enjoy the natural sweetness of applesauce. Perfect for breakfast or a snack, they are easy to make with simple pantry ingredients and topped with a crunchy brown sugar sprinkle for added texture.

  • Total Time: 37 minutes
  • Yield: 12 muffins

Ingredients

Wet Ingredients

  • ½ cup unsalted butter (melted and cooled)
  • 1 cup brown sugar
  • ¾ cup unsweetened applesauce
  • 1 tablespoon pure vanilla extract
  • 2 large eggs

Dry Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

Topping

  • 2 tablespoons brown sugar

Instructions

  1. Prep. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners and set it aside to prepare for baking.
  2. Make the batter. In a mixing bowl, combine the melted and cooled butter with 1 cup of brown sugar. Beat with a hand-held mixer until the sugar dissolves completely. Stir in the unsweetened applesauce and pure vanilla extract until well combined. Add the eggs one at a time, beating thoroughly after each addition to incorporate them fully.
  3. Add the dry ingredients. To the wet mixture, add the all-purpose flour, baking powder, ground cinnamon, and ground nutmeg. Stir gently with a spatula or spoon just until the dry ingredients are incorporated to avoid overmixing, which ensures tender muffins.
  4. Bake the muffins. Spoon the batter evenly into the prepared muffin liners, filling each about ¾ full. Sprinkle 2 tablespoons of brown sugar evenly over the tops of the batter for a sweet, crunchy crust. Place the muffin tin in the oven and bake for 20 to 22 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool. Once baked, remove the muffins from the oven. Allow them to cool in the muffin pan for about 5 minutes, then transfer the muffins to a wire rack to cool completely before serving.

Notes

  • Ensure butter is melted and cooled slightly to prevent cooking the eggs when mixing.
  • Do not overmix the batter to keep muffins light and tender.
  • Use unsweetened applesauce to control sweetness and moisture level.
  • Brown sugar topping adds a pleasant crunchy texture, but can be omitted if preferred.
  • Store muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage.
