Ingredients
Spicy Candied Pecans
- 1 cup pecan halves
- ½ tablespoon unsalted butter (melted and cooled)
- 1 ½ tablespoons natural cane sugar (or light brown sugar)
- 2 teaspoons maple syrup
- ¼ teaspoon ground cinnamon
- ¾ teaspoon kosher salt
- ¼ teaspoon cayenne pepper
Blackberry Compote
- 2 cups blackberries (plus more for garnish)
- 1 tablespoon lemon juice (freshly squeezed)
- 1 tablespoon honey
- 1 teaspoon vanilla extract
Baked Brie
- 2 wheels Brie (8-ounces each, room temperature)
Garnish & Serving
- Handful of pomegranate seeds (optional)
- A few fresh thyme leaves (optional)
- Crackers for serving
Instructions
- Make the Spicy Candied Pecans: Preheat your oven to 350°F. Line a baking sheet with parchment paper and place the pecans evenly spread on the sheet. Toast them in the oven for 10 minutes or until fragrant.
- Coat the Pecans: While the pecans toast, combine the melted butter, cane sugar, maple syrup, cinnamon, kosher salt, and cayenne pepper in a bowl. Carefully add the hot toasted pecans to this mixture, stirring to coat evenly. Spread the coated pecans back onto the lined baking sheet in a single layer.
- Bake Candied Pecans: Return the pecans to the oven and bake for another 10 minutes, stirring every 3-4 minutes to prevent burning. Once done, remove from the oven and let them cool completely to set.
- Prepare the Blackberry Compote: In a medium saucepan, combine blackberries, freshly squeezed lemon juice, honey, and vanilla extract. Heat on medium while stirring regularly. As the berries release their juices, increase the heat to medium and continue cooking until the compote thickens to a syrupy consistency, stirring occasionally.
- Preheat Oven for Brie: Preheat the oven again to 350°F and line a baking sheet with parchment paper.
- Prepare the Brie: Carefully slice off the top rind of each Brie wheel and discard, leaving the sides intact. Place the Brie wheels on the prepared baking sheet.
- Bake the Brie: Bake in the oven for about 15 minutes or until the Brie is melted through and soft.
- Top the Baked Brie: Remove the Brie from the oven and spoon generous amounts of the blackberry compote on top of each wheel. Sprinkle with the cooled spicy candied pecans.
- Garnish and Serve: Optionally garnish with extra fresh blackberries, pomegranate seeds, and fresh thyme leaves. Serve immediately with crackers on the side for dipping and spreading.
Notes
- Be cautious when mixing hot pecans with the butter mixture as it may sputter.
- Removing the top rind of the Brie allows for a gooier, more spreadable cheese texture.
- Blackberry compote can be made ahead and refrigerated for up to 3 days.
- Ensure pecans are cooled completely before mixing with the cheese to retain their crunch.
- Serve immediately after baking for the best melted texture.
