Ingredients
Protein & Seasoning
- 1 pound ground chicken
- 3 tablespoons taco seasoning
Tortillas & Oil
- 10 corn tortillas
- 1 1/2 tablespoons olive oil (divided)
Fillings & Toppings
- 2 cups shredded cheese
- 1 cup salsa (or enchilada sauce or taco sauce)
- lettuce (to taste, shredded)
- 1 medium tomato, diced
- fresh limes, juiced
- 1 ripe avocado, sliced
- fresh cilantro, chopped
Instructions
- Preheat Oven: Preheat your oven to 425℉ (220℃) and line a large baking sheet with parchment paper to prevent sticking. Using a jumbo-sized sheet allows room for all tacos to bake evenly.
- Cook Chicken: Heat 1/2 tablespoon of olive oil in a skillet over medium-high heat. Add the ground chicken, breaking it apart with a spatula as it cooks. Continue cooking until the chicken is browned and fully cooked through. Stir in the taco seasoning and prepare the mixture with a splash of water as per package instructions to blend flavors and keep the meat moist.
- Prepare Tortillas: Stack the corn tortillas and wrap them in a damp paper towel. Microwave them for 30 seconds to 1 minute until they become soft and pliable. This prevents tearing when folding. Lay them out evenly on the prepared baking sheet and lightly brush both sides with the remaining olive oil for crispiness.
- Assemble Tacos: Spoon an even amount of the cooked chicken onto one half of each tortilla. Top the chicken with shredded cheese and then 1-2 tablespoons of salsa. Fold each tortilla over the filling to form a taco shape and place them on the baking sheet.
- Bake: Place the baking sheet in the preheated oven and bake the tacos for about 15 minutes, or until the cheese has melted and the tortillas become crispy.
- Add Fresh Toppings: Carefully open each baked taco and garnish with shredded lettuce, diced tomatoes, a squeeze of fresh lime juice, sliced avocado, and chopped cilantro for a burst of fresh flavor and texture.
Notes
- For extra crispy tacos, you can flip them halfway through baking.
- Use your favorite type of shredded cheese such as cheddar, Monterey Jack, or a Mexican blend.
- If you prefer a spicier dish, add some sliced jalapeños or hot sauce before baking.
- Wrap leftover tacos tightly in foil and refrigerate; reheat in the oven to maintain crispiness.
