Ingredients
Vegetables & Aromatics
- 2 cups cherry or grape tomatoes
- 1 red bell pepper, diced
- ½ small red onion, diced
- 3 cloves garlic, minced
- 1 cup chopped baby spinach
Dairy
- 8 ounces feta cheese
Oils & Seasonings
- 4 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- ½ teaspoon dried thyme
- ½ teaspoon ground black pepper
- ½ teaspoon red pepper flakes
Other
- 4 large eggs
- Optional: chopped fresh basil or fresh chives for topping
Instructions
- Preheat Oven: Set your oven to 400°F (204°C) to ensure it’s ready for baking the vegetables, feta, and eggs.
- Prepare Bakeware: If using ramekins or individual dishes, distribute the tomatoes, bell pepper, red onion, garlic, and feta cheese evenly among four oven-safe bowls. Drizzle one tablespoon of olive oil over each dish. For a single large baking dish, combine the vegetables and garlic, place the feta in the center, and drizzle olive oil over all ingredients.
- Mix Seasonings: In a small bowl, combine dried oregano, sea salt, dried thyme, black pepper, and red pepper flakes. Sprinkle this spice blend evenly over the vegetables and feta in each dish.
- Bake Vegetables and Feta: Place the ramekins on a baking sheet or put the large dish directly in the oven. Bake for 25 minutes until the vegetables are softened and the feta starts to melt.
- Stir and Add Spinach: Remove the dishes from the oven. Stir the contents to mix the melted feta evenly with the vegetables. Add the chopped baby spinach and combine thoroughly.
- Crack the Eggs: Create a small well in the center of each portion (or four wells if using one large dish), then crack one egg into each well.
- Bake Eggs: Return the dishes to the oven and bake for an additional 10 minutes, or until the egg whites are set but yolks remain slightly runny or cooked to your preference.
- Garnish and Serve: Finish by topping with chopped fresh basil or chives if desired. Serve warm with crusty baguette, toast, or pita for dipping to enjoy a flavorful and hearty meal.
Notes
- You can adjust the baking time slightly depending on how runny or firm you prefer your egg yolks.
- For vegan or dairy-free diets, try replacing feta cheese with a plant-based cheese alternative.
- The spice blend can be customized to taste – add more red pepper flakes for extra heat or substitute herbs such as rosemary for oregano.
- Using individual ramekins makes portion control easier and adds an elegant presentation for brunch gatherings.
- Leftovers can be refrigerated and gently reheated, though eggs may become firmer when reheated.
