Instructions
- Preheat oven: Heat your oven to 350°F (175°C) to prepare for baking the feta and accompaniments.
- Prepare baking dish: Place the 8-ounce block of feta cheese in a small baking dish, ensuring it sits in the center.
- Add olives and tomatoes: Scatter 1 cup of pitted olives and 1/2 cup of sun-dried tomatoes around the feta in the dish.
- Make herb oil mixture: In a small bowl, combine 1/3 cup olive oil, 3 thinly sliced garlic cloves, 1/2 teaspoon dried oregano, 1/2 teaspoon dried thyme, 1/2 teaspoon dried rosemary, and add a couple of pinches of kosher salt and fresh cracked pepper.
- Pour over ingredients: Drizzle the herb and garlic oil mixture evenly over the block of feta, olives, and sun-dried tomatoes to coat everything well.
- Bake and broil: Bake the dish in the preheated oven for 20 minutes until the feta softens and flavors meld. Then broil for 1-2 minutes to achieve a slight golden top and caramelized edges.
- Garnish and serve: Remove from oven and sprinkle fresh chopped parsley on top. Serve warm with sliced French bread or crispy crostini for dipping.

Notes
- Use a high-quality block of feta for the best creamy texture and flavor.
- Pitted olives like Kalamata work well, but feel free to mix different varieties for depth.
- Sun-dried tomatoes packed in oil enhance richness; if using dry-packed, rehydrate slightly before use.
- Adjust garlic and herbs according to taste preferences.
- Serve immediately for the best melting texture and warm flavors.
- This dish pairs wonderfully with a crisp white wine or a light red.
