This Baked Garlic Parmesan Chicken and Potatoes recipe offers a delicious and easy one-pan meal perfect for any weeknight dinner. Tender chicken breast pieces are seasoned with a flavorful spice mix and parmesan, paired with crispy roasted red potatoes, all baked together to perfection on a single sheet pan.

  • Total Time: 40 minutes
  • Yield: 6 servings

Ingredients

Spice Mix:

  • 2 teaspoons paprika
  • 2 teaspoons dried parsley
  • 1 1/2 teaspoons garlic salt
  • 1 teaspoon onion powder
  • 1 teaspoon ground pepper

Chicken and Potatoes:

  • 1 1/2 lbs. chicken breasts, boneless skinless, cut into 1″ pieces
  • 24 oz. red potatoes, cut into 1″ cubes
  • 4 Tablespoons grated parmesan cheese, divided
  • 2 Tablespoons minced garlic, divided
  • 2 Tablespoons olive oil, divided

Instructions

  1. Preheat the Oven and Prepare Pan: Preheat your oven to 400°F (200°C). Lightly spray a large sheet pan with non-stick cooking spray and set it aside for later.
  2. Make the Spice Mix: In a small bowl, combine paprika, dried parsley, garlic salt, onion powder, and ground pepper. Mix well then divide the mixture evenly into two portions, about 1 tablespoon each. One portion will season the potatoes and the other will be used for the chicken.
  3. Prepare the Potatoes: In a mixing bowl, add the cubed red potatoes, 2 tablespoons of grated parmesan, 1 tablespoon of olive oil, 1 tablespoon of minced garlic, and one tablespoon of the spice mixture. Use a rubber scraper to thoroughly coat the potatoes with the seasoning.
  4. Start Roasting Potatoes: Spread the seasoned potatoes on one side of the prepared sheet pan, leaving space for the chicken. Roast the potatoes in the preheated oven for 15 minutes, as they need extra time to cook.
  5. Prepare the Chicken: While the potatoes roast, place the chicken pieces in another mixing bowl. Add the remaining 1 tablespoon olive oil, 2 tablespoons parmesan cheese, 1 tablespoon minced garlic, and the reserved tablespoon of the spice mix. Stir everything until the chicken is evenly coated.
  6. Combine and Continue Roasting: After the potatoes have cooked for 15 minutes, remove the sheet pan from the oven. Add the coated chicken pieces to the other side of the pan. Return the pan to the oven and bake both chicken and potatoes together for an additional 20 minutes.
  7. Rest and Serve: Once finished baking, remove the sheet pan from the oven and let the chicken and potatoes rest for 5 to 10 minutes before serving to allow flavors to settle and juices to redistribute.

Notes

  • Cut chicken and potatoes into uniform 1-inch pieces for even cooking.
  • Use fresh grated parmesan for the best flavor and texture.
  • Non-stick cooking spray helps prevent sticking and promotes even roasting.
  • Letting the dish rest after baking improves juiciness and flavor development.
  • Adjust seasoning according to taste, especially if using salted parmesan or garlic salt.
