Ingredients
Donuts
- 3/4 cup packed light brown sugar
- 3/4 cup pumpkin puree
- 1 tablespoon maple syrup
- 1 large egg
- 1/3 cup vegetable oil
- 1/2 cup buttermilk
- 1-1/2 teaspoons vanilla extract
- 2 cups all-purpose flour (spooned and leveled)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1-1/2 teaspoons pumpkin pie spice
- 1/4 teaspoon kosher salt
Cream Cheese Glaze
- 2 oz cream cheese, softened
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice
- 1-2 tablespoons 2% or skim milk
- Additional pumpkin pie spice for dusting donuts
Instructions
- Preheat and prepare pans: Preheat your oven to 350°F (175°C). Grease two donut pans thoroughly and set them aside to get ready for the batter.
- Mix wet ingredients: In a medium bowl, whisk together the light brown sugar, pumpkin puree, maple syrup, egg, vegetable oil, buttermilk, and vanilla extract until the mixture is smooth and well combined.
- Combine dry ingredients: In a separate medium bowl, whisk together the all-purpose flour, baking powder, baking soda, pumpkin pie spice, and kosher salt until evenly incorporated.
- Fold batter: Gently fold the dry ingredient mixture into the wet mixture, stirring just until combined to avoid overmixing which can toughen the donuts.
- Fill donut pans: Transfer the batter into a sealable plastic bag, seal it, and snip off a small corner. Pipe the batter evenly into the prepared donut pans, filling each cavity about three-quarters full for best rise and shape.
- Bake the donuts: Place the pans in the preheated oven and bake for 12-15 minutes. The donuts are done when they spring back lightly to the touch. Remove from oven and let the donuts cool in the pans for 10 minutes before transferring them carefully to a wire rack to cool completely.
- Prepare cream cheese glaze: Using a handheld electric mixer, beat the softened cream cheese in a medium bowl until smooth and creamy. Gradually add the powdered sugar, vanilla extract, and pumpkin pie spice, mixing until combined.
- Adjust glaze consistency: Add 1 to 2 tablespoons of milk gradually to the cream cheese mixture until it reaches a smooth, drizzling consistency perfect for glazing.
- Glaze the donuts: Dip the cooled donuts into the cream cheese glaze, coating them generously. Place them back on the wire rack and dust with a little extra pumpkin pie spice for added flavor and decoration.
- Set and serve: Allow the donuts to set with the glaze for about 10 minutes before serving. Enjoy these delicious pumpkin treats fresh!
Notes
- Use a sealable bag for piping batter to keep the process neat and easy.
- Make sure not to overmix the batter to keep the donuts light and fluffy.
- If you don’t have pumpkin pie spice, combine ground cinnamon, nutmeg, ginger, and cloves as a substitute.
- Donuts are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
- For a dairy-free version, substitute vegetable oil with coconut oil and use a dairy-free cream cheese alternative.
