  • Total Time: 32 minutes
  • Yield: 4 servings

Ingredients

Salmon and Seasoning

  • 2 lbs salmon with skin on (whole salmon or cut into fillets)
  • 2 tbsp canola oil (for cooking)
  • 1 tsp salt (more or less to taste)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp coriander
  • 1 lime – zest only

Avocado Salsa

  • 2 ripe avocados
  • 1 corn on the cob
  • 1/2 small red onion
  • 2 tbsp minced fresh cilantro
  • 1 lime – juice only
  • 1/2 tsp chili powder
  • 1 tsp cumin
  • Salt to taste

Instructions

  1. Boil the Corn: Start by boiling water in a pot. Add salt and the corn on the cob, cooking it for 6-8 minutes until tender. Carefully remove the corn and let it cool enough to handle.
  2. Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil to ensure easy cleanup later.
  3. Prepare Seasoning Mix: In a bowl, combine salt, cumin, chili powder, smoked paprika, coriander, and lime zest. Mix thoroughly to create a flavorful seasoning blend.
  4. Season the Salmon: Pat the salmon dry using paper towels. Generously coat the salmon with the seasoning mix, pressing it lightly so it adheres well.
  5. Bake the Salmon: Spread canola oil on the bottom of the prepared baking sheet and place the salmon on it. Bake in the preheated oven for 20-24 minutes, adjusting time based on the thickness and size of the fillets until cooked through.
  6. Prepare the Avocado Salsa – Remove Corn Kernels: Once the corn has cooled, stand the cob upright on a cutting board and carefully cut off the kernels into a bowl.
  7. Prepare the Avocado Salsa – Dice Avocado: Cut the avocados in half, remove the seeds, scoop out the flesh, and dice it into the bowl with the corn kernels.
  8. Mix the Salsa Ingredients: Add finely chopped red onion, minced cilantro, lime juice, chili powder, cumin, and salt to the bowl with avocado and corn. Gently mix all the ingredients to combine flavors without mashing the avocado.
  9. Serve: Spoon a generous amount of the fresh avocado salsa over each portion of baked salmon. Enjoy immediately for the best flavor and texture.

Notes

  • Adjust seasoning quantities to suit your preferred level of spice and saltiness.
  • For even cooking, try to select fillets of similar size and thickness.
  • If fresh corn is unavailable, frozen corn kernels can be used as a substitute for the salsa.
  • The avocado salsa can be made ahead and refrigerated for up to 2 hours, but it’s best served fresh to maintain the avocado’s texture and color.
  • Use a meat thermometer to check the salmon’s internal temperature; it should reach 145°F (63°C) to be fully cooked and safe to eat.
