Ingredients
Wet Ingredients
- 2 overripe bananas
- ¼ cup melted coconut oil
- ¼ cup unsweetened applesauce
- ¾ cup coconut sugar
- ½ teaspoon vanilla extract
Dry Ingredients
- 1 ½ cups old fashioned rolled oats
- ¾ cup whole wheat pastry flour (or all-purpose flour)
- ¾ teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
Add-ins
- ¼ cup raisins
- ½ cup chopped walnuts
Instructions
- Prep: Preheat your oven to 350°F (175°C). Lightly grease an 8″ x 8″ square baking dish with cooking spray to prevent sticking.
- Toast walnuts: Spread the chopped walnuts evenly on an ungreased baking sheet. Toast them in the oven for 5 to 8 minutes until they become fragrant and slightly browned. Keep an eye on them to avoid burning.
- Mix wet ingredients: While walnuts are toasting, mash the overripe bananas in a medium bowl until smooth. Add the melted coconut oil, unsweetened applesauce, coconut sugar, and vanilla extract. Stir well until all wet ingredients are combined.
- Mix dry ingredients: In a large mixing bowl, combine the rolled oats, whole wheat pastry flour, baking powder, baking soda, salt, ground cinnamon, and nutmeg. Mix thoroughly to evenly distribute the ingredients.
- Combine: Pour the wet banana mixture into the bowl with dry ingredients. Stir gently until just combined, avoiding overmixing to maintain a tender texture. Fold in the toasted walnuts and raisins evenly throughout the batter.
- Bake: Transfer the mixture to the prepared baking dish, spreading it out evenly. Bake in the preheated oven for 25 to 30 minutes or until the top is golden brown and a toothpick inserted into the center comes out mostly clean. Remove from the oven and let cool completely before slicing into bars.
Notes
- Make sure to use overripe bananas for natural sweetness and moistness.
- Toasting walnuts enhances their flavor and crunch.
- Do not overmix the batter to avoid dense bars.
- You can substitute raisins with other dried fruits like cranberries or chopped dates.
- Store bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
