Ingredients
Chicken and Rice
- 1½ pounds chicken breast, diced into 1 inch cubes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 2 teaspoons toasted sesame oil
- 1 cup jasmine rice
- 1½ cups chicken broth
- 12 ounces frozen peas and carrots, thawed
Bang Bang Sauce
- ½ cup mayonnaise
- ½ cup sweet chili sauce
- 1 tablespoon sriracha (or other hot sauce)
- 1 tablespoon lime juice
Garnish (optional)
- Sliced green onions
Instructions
- Preheat Oven: Preheat your oven to 375˚F (190˚C) to ensure it’s hot and ready for baking the dish evenly.
- Prepare Bang Bang Sauce: In a bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth and well combined. Set aside some sauce for drizzling later.
- Season Chicken: Place the diced chicken breast into a 9×13 inch baking dish. Sprinkle the garlic powder, onion powder, paprika, and salt over the chicken. Drizzle toasted sesame oil on top, then mix thoroughly using a spoon or your hands so all pieces are evenly coated with the seasoning.
- Assemble Bake: Spread the seasoned chicken evenly across the bottom of the baking dish. Top it with the rice and thawed peas and carrots, spreading these evenly over the chicken. Drizzle half of the prepared bang bang sauce over the rice and veggies. Pour the chicken broth over everything to help cook the rice and keep it moist.
- Bake: Place the baking dish in the preheated oven and bake for 35-45 minutes. Bake until the rice is cooked through, tender, and the liquid has been absorbed fully.
- Finish and Garnish: When done baking, remove the dish from the oven and drizzle the remaining bang bang sauce over the top for extra flavor and creaminess. Garnish with sliced green onions if desired before serving.
Notes
- Ensure the rice is evenly spread and submerged in the broth for proper cooking.
- You can substitute jasmine rice with basmati or long grain rice if preferred.
- Adjust the amount of sriracha in the sauce to control the heat level.
- Allow the bake to rest for 5 minutes after coming out of the oven for easier serving.
- Use fresh chicken breasts, and dice into uniform pieces to ensure even cooking.
