Delight in a fresh and flavorful appetizer with this Basil Blueberry Ricotta Bruschetta recipe. Juicy roasted blueberries combined with creamy ricotta, fragrant basil, and a hint of honey create a perfect balance of sweet and savory, served atop toasted French bread and finished with a tangy balsamic glaze. Perfect for a light snack or elegant starter, ready in just 30 minutes.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Fruit Mixture

  • 1-1/2 cups fresh or frozen blueberries (if using frozen, thaw before using)
  • 2 tablespoons honey or agave nectar
  • 1 tablespoon lemon juice

Bruschetta Base

  • 8 slices French bread
  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup ricotta cheese (low fat or regular both work fine)
  • 1/4 cup minced fresh basil

Finishing Touch

  • Balsamic glaze for drizzling

Instructions

  1. Preheat and Prepare Blueberries: Preheat your oven to 400°F (200°C) and line a medium sheet pan with parchment paper. In a medium bowl, gently toss the blueberries with honey (or agave nectar) and lemon juice until they are evenly coated.
  2. Roast Blueberries: Spread the blueberry mixture in an even layer on the prepared sheet pan. Roast in the oven for 10-15 minutes until the blueberries start to burst and release their juices. Remove from the oven and set aside to cool slightly.
  3. Toast Bread Slices: Arrange the French bread slices in a single layer on a large baking sheet. Lightly brush both sides of each slice with extra-virgin olive oil. Place under a broiler on high heat for 1-2 minutes until lightly toasted, then flip to the other side and broil for another 1-2 minutes.
  4. Assemble Bruschetta: Spread about a spoonful of ricotta cheese on each toasted bread slice. Top with the warm roasted blueberries and sprinkle minced fresh basil over each piece.
  5. Drizzle and Serve: Finish each bruschetta with a light drizzle of balsamic glaze. Serve immediately while the bruschetta is still warm for the best flavor and texture.

Notes

  • Using frozen blueberries? Be sure to thaw them completely before tossing with honey and lemon juice for even roasting.
  • For a dairy-free version, substitute ricotta with a vegan cheese or mashed avocado.
  • If you prefer a crunchier bread base, toast the French slices longer or use a baguette for added texture.
  • Balsamic glaze can be found pre-made or you can reduce balsamic vinegar by simmering until thickened.
  • Leftover roasted blueberries can be used as a topping for yogurt or pancakes.
