Ingredients
BBQ Chicken
- 3 lbs chicken breast
- 2 cups BBQ sauce
- 1/3 cup brown sugar
- 2 tbsp apple cider vinegar
- 2 tsp garlic powder
- 2 tsp liquid smoke
Baked Potatoes and Toppings
- 8 large russet Idaho® potatoes
- 1 cup cheddar cheese, shredded
- 1/2 cup sour cream
- 1/4 cup chives, chopped
Instructions
- Prepare the BBQ Chicken: Add the chicken breasts, BBQ sauce, brown sugar, apple cider vinegar, garlic powder, and liquid smoke to your slow cooker. Stir gently to combine all ingredients.
- Cook the Chicken: Cook on high for 3.5 hours, or until the chicken is tender enough to be easily shredded with a fork.
- Shred the Chicken: Using two forks, shred the chicken directly in the slow cooker. Stir to mix the shredded chicken into the sauce, cover, and continue cooking on high for another 10 minutes to allow flavors to meld.
- Preheat the Oven: While the chicken finishes cooking, preheat your oven to 425°F (220°C) to prepare for baking the potatoes.
- Bake the Potatoes: Wash the potatoes thoroughly and place them on a baking sheet. Bake in the preheated oven for 55-60 minutes until the potatoes are soft and easily pierced with a fork.
- Assemble the Baked Potatoes: Once the potatoes are done, cut each potato in half lengthwise. Top each half generously with the shredded BBQ chicken, shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped chives.
- Serve: Serve the loaded BBQ chicken baked potatoes hot and enjoy a hearty, flavorful meal.
Notes
- For extra smoky flavor, consider adding smoked paprika to the chicken mixture.
- You can substitute chicken thighs for breasts for a juicier result.
- If short on time, bake the potatoes ahead of time and reheat before assembling.
- Make sure to prick potatoes with a fork before baking if you use different potato types.
- Adjust BBQ sauce level according to your taste preference for spice and sweetness.
