Ingredients
BBQ Chicken Mixture
- 2 tablespoons olive oil
- 1 small red onion, thinly sliced
- 3 cloves garlic, minced
- 2 ½ cups shredded roasted chicken
- ½ teaspoon paprika
- 1 teaspoon Worcestershire sauce
- 1 cup BBQ sauce
Garlic Butter Bread
- ¼ cup butter
- 2 cloves garlic, minced
- 2 teaspoons parsley, minced
- 12 slices sourdough bread or sturdy white bread
- 12 slices Havarti cheese
Instructions
- Prepare BBQ Chicken Mixture: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the thinly sliced red onions and cook until they soften, about 2 minutes. Then add the minced garlic and cook until fragrant, approximately 30 seconds. Incorporate the shredded roasted chicken, paprika, Worcestershire sauce, and BBQ sauce. Stir well to combine and cook for an additional 2-3 minutes until heated through.
- Make Garlic Butter: In a medium bowl, combine ¼ cup butter, minced garlic, and minced parsley. Microwave briefly until the butter is fully melted and the mixture is aromatic.
- Butter the Bread: Lay out all 12 slices of sourdough bread on a work surface. Generously spread the melted garlic butter mixture over one side of each slice, ensuring even coverage.
- Assemble Sandwiches: Place 6 slices of the buttered bread buttered-side down. Top each slice evenly with one slice of Havarti cheese, then divide the BBQ chicken mixture evenly among these slices. Add another slice of Havarti cheese over the chicken. Finally, top each with the remaining 6 slices of bread, buttered side facing up.
- Cook the Sandwiches: Heat a large non-stick skillet over medium heat. Place the prepared sandwiches in the skillet and cook for 3-5 minutes until the bottom slices are golden brown. Carefully flip each sandwich, reduce the heat to medium-low, and cook for another 3-5 minutes until the other side is browned and the cheese inside has melted.
- Serve: Once cooked to a golden crisp and melted inside, remove the sandwiches from the skillet. Slice and serve warm for the best flavor and texture experience.
Notes
- Use sturdy bread such as sourdough to avoid sogginess and provide structure.
- If you prefer spicier sandwiches, add a pinch of cayenne pepper to the chicken mixture.
- Substitute Havarti cheese with mozzarella or cheddar if preferred.
- For a quicker version, use pre-cooked rotisserie chicken.
- Leftovers can be refrigerated and reheated in a skillet to preserve crispiness.
