  • Total Time: 1 hour
  • Yield: 8 servings

Ingredients

Main Ingredients

  • Cooking spray
  • 1 tablespoon olive oil
  • 1 large yellow onion, finely diced
  • 1 pound lean ground beef (93/7)
  • 1 (1-ounce) packet taco seasoning
  • 3/4 cup mild red enchilada sauce
  • 1 (15-ounce) can black beans, drained and rinsed (optional)
  • 1 batch cilantro-lime rice (or white rice)
  • 8 large (10-inch) flour tortillas
  • 1 (16-ounce) can refried beans
  • 2 packed cups sharp Cheddar cheese, freshly shredded

Toppings

  • Sour cream
  • Avocado or guacamole
  • Pico de gallo
  • Salsa

Instructions

  1. Sear: Heat 1 tablespoon of olive oil in a large skillet over high heat. Add the finely diced yellow onion and sauté until golden, about 3 minutes. Push the onions to the pan’s edges to make space in the center.
  2. Cook the Beef: Add 1 pound of lean ground beef to the center of the skillet. Sear until nicely browned, then crumble the beef and continue cooking until fully cooked through, about 3–5 minutes. Drain any excess grease if needed.
  3. Simmer: Reduce heat to medium and add the spice from a 1-ounce packet of taco seasoning, stirring well until the beef is fragrant, about 1–3 minutes. Pour in 3/4 cup of mild red enchilada sauce and allow to simmer until thickened. Remove from heat and gently stir in drained and rinsed black beans if using. Let the mixture cool slightly.
  4. Prepare Rice: While the beef simmers, prepare a batch of cilantro-lime rice or white rice according to your preference.
  5. Assemble: Lay out the 8 large flour tortillas and spread refried beans on each. Evenly distribute the beef mixture, cilantro-lime rice, and freshly shredded sharp Cheddar cheese (about 2 packed cups) among the tortillas along with any desired toppings.
  6. Roll Burritos: Roll up the tortillas tightly to enclose the fillings.
  7. Bake: Preheat oven to 375°F (190°C). Lightly spray the burritos with cooking spray and rub it evenly over their surface. Coat a large, dark-colored baking sheet with cooking spray and arrange the burritos spaced apart. Bake for 8 minutes, then flip and bake another 5 minutes until the burritos are crisp on the outside.
  8. Serve: Remove from oven and let cool for 5 minutes. Serve with toppings like sour cream, avocado, guacamole, pico de gallo, and salsa for a delicious meal.

Notes

  • Note 1: Use your preferred taco seasoning packet or homemade seasoning blend.
  • Note 2: Mild red enchilada sauce adds a subtle depth to the beef; substitute with your favorite enchilada sauce if desired.
  • Note 3: Cilantro-lime rice adds freshness and flavor; white rice can be used as a simple alternative.
  • You can crisp the burritos in a skillet on the stovetop if you prefer not to use the oven.
  • Drain and rinse canned beans well to reduce sodium and improve texture.
