A quick and flavorful Beef in Oyster Sauce recipe featuring tender beef flank steak marinated and stir-fried with fresh bok choy, garlic, and onions, all coated in a savory oyster sauce glaze. Perfect for a delicious Asian-inspired weeknight dinner served over rice or noodles.

  • Total Time: 30 minutes
  • Yield: 3 servings

Ingredients

Beef Marinade

  • 1 pound beef flank steak, thinly sliced
  • 2 Tablespoons cornstarch
  • 1 Tablespoon soy sauce
  • 1 Tablespoon rice vinegar
  • 1 beaten egg white

Stir-Fry

  • 1 Tablespoon sesame oil
  • 2 teaspoons diced garlic
  • 1 teaspoon grated ginger
  • 1 small white onion, chopped
  • 2 bunches of bok choy
  • 2 tablespoons oyster sauce
  • 1 tablespoon light soy sauce
  • 1 teaspoon granulated sugar
  • Vegetable oil, for cooking (generous drizzles as needed)

Garnish

  • Sesame seeds
  • Green onions, sliced

Instructions

  1. Marinate the Beef: Add the thinly sliced beef to a resealable bag along with cornstarch, soy sauce, rice vinegar, and beaten egg white. Seal and mix well to coat the beef evenly in the marinade. Refrigerate for at least 20 minutes to tenderize and infuse flavor.
  2. Cook the Beef: Heat a large skillet over medium-high heat and add a generous drizzle of vegetable oil. Once hot, add the beef and cook for about one minute on each side until just browned but not overcooked. It’s best to cook in batches to avoid overcrowding the pan. Remove cooked beef onto a plate lined with paper towels to absorb excess oil.
  3. Cook Aromatics and Vegetables: Add another drizzle of vegetable oil to the skillet. Sauté the chopped onions for 1-2 minutes until slightly softened. Add the bok choy and cook for another 2-3 minutes until the vegetables become tender but still crisp.
  4. Combine and Finish: Return the cooked beef to the skillet with the vegetables. Add oyster sauce, light soy sauce, and granulated sugar. Toss everything together and cook for about a minute more, stirring constantly, allowing the sauce to thicken slightly and coat the ingredients.
  5. Serve: Serve the beef and bok choy stir-fry over steamed rice or stir-fry noodles. Garnish with sesame seeds and sliced green onions for added flavor and texture.

Notes

  • For best results, slice the beef thinly against the grain to ensure tenderness.
  • Cooking the beef in batches helps avoid steaming and keeps the meat seared.
  • You can substitute bok choy with other leafy greens like Chinese broccoli or spinach if unavailable.
  • Adjust the amount of oyster sauce and soy sauce to taste depending on your salt preference.
  • This dish can easily be doubled for larger servings.
