Bell Pepper Nachos are a healthier, colorful twist on traditional nachos that replace chips with fresh bell pepper slices. Topped with seasoned ground beef or turkey, black beans, corn, jalapeños, and melted reduced-fat Mexican cheese, these nachos offer a delicious and vibrant appetizer or snack that’s ready in just 30 minutes.

  • Total Time: 30 minutes
  • Yield: 6 servings

Ingredients

Bell Pepper Chips

  • 6 large bell peppers

Ground Meat Mixture

  • 1 pound ground beef or ground turkey
  • 2 tablespoons taco seasoning
  • ¾ cup canned black beans (rinsed and drained)
  • ¾ cup sweet yellow corn (thawed)
  • 1 jalapeño, sliced (optional)

Topping

  • ½ to 1 cup reduced-fat shredded Mexican cheese blend

Instructions

  1. Prepare the Oven and Baking Sheet: Preheat your oven to 375°F (190°C). Coat a large baking sheet or two standard baking sheets with nonstick oil or line them with parchment paper to prevent sticking.
  2. Slice the Bell Peppers: Use a small sharp knife to core out the stem from each bell pepper. Cut each pepper in half, then slice each half into three equal parts. This will yield six “chip” pieces per pepper. Lay the pepper slices in a single layer on the prepared baking sheet, arranging them with the insides facing up.
  3. Cook the Meat Mixture: Heat a large skillet over medium heat. Add the ground beef or turkey, breaking it apart and cooking it until it is browned and fully cooked through. Stir in the taco seasoning and 2/3 cup of water. Add the rinsed black beans, thawed corn, and sliced jalapeños if using. Stir well and cook until the mixture is heated through and combined.
  4. Assemble Nachos: Spoon the seasoned meat and vegetable mixture evenly over each bell pepper chip on the baking sheet. Sprinkle the shredded Mexican cheese blend over the top of the assembled nachos.
  5. Bake to Melt Cheese: Place the baking sheet in the preheated oven and bake for about 10 minutes, or until the cheese has melted and is bubbling slightly.
  6. Serve: Remove from the oven and serve the bell pepper nachos warm. Customize with your favorite nacho toppings such as salsa, guacamole, or sour cream if desired.

Notes

  • For a vegetarian version, substitute ground meat with additional black beans or a plant-based meat alternative.
  • Adjust the jalapeño slices according to your preferred spice level or omit if you want a milder flavor.
  • You can use different colored bell peppers to make the dish more visually appealing.
  • Serve with sides like sour cream, guacamole, or salsa for extra flavor.
  • Using reduced-fat cheese helps lower the overall fat content but still provides great flavor.
