This quick and easy no-bake dessert is perfect for a light treat or elegant presentation, combining sweet, tart, and crunchy textures in every bite.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Fruit Mix

  • 4 Cups mixed berries (fresh strawberries, blueberries, blackberries, raspberries)
  • 1 Tablespoon granulated sugar
  • 1 Tablespoon + 1 Teaspoon fresh lemon juice

Cookie Layer

  • 1 Cup vanilla wafer cookies, crushed (or graham crackers)

Pudding Layer

  • 1½ Cups whole milk
  • 1 Package (3.4-Ounce) vanilla or coconut pudding mix
  • 4 Ounces whipped topping, thawed (about ½ small tub)

Toppings

  • ¼ Cup shredded coconut flakes or coconut chips
  • ⅓ Cup sliced almonds

Instructions

  1. Prepare the berries: Remove the stems from all berries and quarter the strawberries. Place the mixed berries into a medium bowl. Add sugar and lemon juice, then stir gently to combine. Set aside to macerate.
  2. Crush the cookies: Place the vanilla wafer cookies in a plastic bag or bowl and crush into coarse chunks using the bottom of a glass. Set aside.
  3. Make the pudding: In a medium bowl, whisk together the whole milk and pudding mix for 2 to 3 minutes until it starts to thicken. Refrigerate for 10 minutes to let it fully set.
  4. Fold in whipped topping: After the pudding has set, gently fold in the thawed whipped topping to create a smooth, creamy mixture.
  5. Assemble the parfaits: Evenly distribute the crushed cookie pieces among 4 parfait glasses to form the base layer.
  6. Add berries: Spoon about 2 tablespoons of the mixed berries evenly over the cookie layer in each glass.
  7. Add pudding layer: Carefully spoon 2 tablespoons of the pudding mixture over the berries in each glass.
  8. Repeat layering: Alternate layers by adding another 2 tablespoons of berries, then 2 tablespoons of pudding mixture, followed by a final 2 tablespoons of berries.
  9. Top with garnish: Sprinkle the coconut flakes and sliced almonds over the top layer of berries as desired for added texture and flavor.
  10. Serve or store: Serve immediately for the freshest taste, or cover and refrigerate until ready to enjoy.

Notes

  • Use fresh, ripe berries for the best flavor and texture.
  • Vanilla or coconut pudding mix can be substituted for variety; do not cook the pudding, just whisk and chill as instructed.
  • For a dairy-free option, substitute the milk with almond or coconut milk and use a compatible pudding mix.
  • Make the parfaits up to 2 hours ahead and keep refrigerated to allow flavors to meld.
  • Adjust sweetness by varying the amount of sugar or using a sugar substitute if preferred.
