Ingredients
Main Casserole
- 2 cups sharp cheddar cheese, freshly shredded
- 1½ cups sour cream
- 1 (10.5 ounce) can cream of chicken soup (or cream of mushroom soup)
- 4 tablespoons butter, melted
- ½ white onion, finely diced
- 1 teaspoon garlic salt
- 1 teaspoon onion powder
- ½ teaspoon ground black pepper
- 1 (26-ounce) bag frozen shredded potatoes (frozen hash browns), thawed completely and drained
Topping
- 4 tablespoons butter, melted
- 2 cups cornflakes
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and lightly spray or grease a 9×13-inch casserole dish or large oven-safe skillet to prevent sticking.
- Mix Casserole Ingredients: In a large bowl, combine the shredded sharp cheddar cheese, sour cream, cream of chicken soup, half of the melted butter (4 tablespoons), finely diced white onion, garlic salt, onion powder, and ground black pepper. Stir well to form a creamy mixture.
- Add Potatoes: Gently fold in the thawed and well-drained shredded potatoes, mixing carefully to avoid breaking up the potatoes too much. Spread this mixture evenly into the prepared casserole dish.
- Prepare Topping: In a small bowl, mix the remaining melted butter with the cornflakes until evenly coated. Sprinkle this mixture evenly over the top of the potato casserole to create a crunchy topping.
- Bake the Casserole: Place the casserole uncovered in the preheated oven and bake for 50-60 minutes. About halfway through baking, rotate the pan for even cooking. The casserole is done when it bubbles around the edges and the cornflake topping is golden brown. If the topping starts to burn before the casserole is cooked through, tent the dish loosely with foil.
- Rest & Serve: Remove the casserole from the oven and let it rest for 10 minutes before serving. Optionally, garnish with freshly chopped parsley for a fresh touch.
Notes
- Be sure to thaw and drain the frozen shredded potatoes well to avoid excess moisture in the casserole.
- You can substitute cream of chicken soup with cream of mushroom soup for a vegetarian version (not vegan).
- For a crispier topping, consider adding a sprinkle of grated Parmesan cheese to the cornflake mixture.
- Leftovers can be stored covered in the refrigerator for up to 3 days and reheated in the oven.
- This casserole pairs well with green salads or steamed vegetables for a well-rounded meal.
