  • Total Time: 53 minutes
  • Yield: 4 servings

Ingredients

Beef Marinade

  • 4 oz. filet mignon or rib eye fillet, thinly sliced
  • 2 teaspoons reduced-sodium soy sauce
  • 1 teaspoon toasted sesame seed oil
  • 1 teaspoon sugar
  • 1/4 teaspoon pepper
  • 1 garlic clove, minced

Noodle Marinade

  • 1/4 cup reduced-sodium soy sauce
  • 1 ½ tablespoons toasted sesame seed oil
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 2 teaspoons gochujang
  • 1 teaspoon rice vinegar

Main Ingredients

  • 7 oz. Korean sweet potato starch noodles (dangmyeon)
  • 3.5 oz. fresh shiitake mushrooms, brushed clean, stems removed, thinly sliced
  • Canola, vegetable oil, or other high-smoke point neutral oil (for cooking)
  • 1 egg, white and yolk separated
  • 1 medium yellow onion, thinly sliced
  • 3 green onion stems, cut into 1 1/2″ lengths, white & green parts separated
  • Sea salt
  • 2 medium carrots, peeled & julienned into 1/8″ batons
  • 1 red bell pepper, julienned
  • 5 oz. baby spinach
  • 2 garlic cloves, minced
  • 2 tablespoons toasted sesame seeds

Instructions

  1. Prep the water: Bring a large pot of water to a boil to cook the noodles. This allows for easy boiling once noodles are ready to be added.
  2. Marinate the Beef: In a medium bowl, whisk together the beef marinade ingredients – soy sauce, sesame seed oil, sugar, pepper, and minced garlic. Add the thinly sliced beef and stir well to coat. Set aside to marinate while you prepare other components.
  3. Marinate the Mushrooms: Whisk all noodle marinade ingredients in a very large bowl (big enough to toss everything later). Transfer one tablespoon of this marinade to a small bowl and add the sliced mushrooms. Let the mushrooms marinate while prepping the rest.
  4. Boil the Noodles: Add the sweet potato noodles to the boiling water and cook for 5 to 7 minutes until soft, chewy, and slightly springy but not mushy. Drain and rinse under cold water to halt cooking. Cut the noodles with kitchen shears into 6 to 8-inch lengths. Transfer the noodles to the large noodle marinade bowl and toss to coat evenly.
  5. Cook the Egg Separately: Beat the egg white in a small bowl. Heat 1 teaspoon oil in a large non-stick pan over medium-low heat, spreading evenly with a brush. Pour in egg white and cook 1 to 2 minutes until set. Transfer cooked egg white to a cutting board. Repeat the process with the egg yolk. Set both aside to slice later.
  6. Cook the Onions: Heat 1 tablespoon oil over medium-high heat. Add sliced yellow onions, white parts of green onions, and 1/8 teaspoon sea salt. Sauté for 2 to 3 minutes until they begin to soften. Transfer onions to the large noodle marinade bowl but do not mix yet.
  7. Cook the Carrot and Bell Pepper: In the same pan, add a little oil over medium-high heat. Add julienned carrot and red bell pepper with 1/8 teaspoon sea salt. Cook for 1 to 1 1/2 minutes until just starting to soften. Transfer to noodle bowl but do not mix.
  8. Cook the Spinach: Heat 1 teaspoon oil over medium heat. Sauté the green onion tops and minced garlic for 30 seconds. Add spinach and 1/8 teaspoon sea salt. Stir until the spinach just wilts, about 2 to 3 minutes. Transfer to noodle bowl without mixing.
  9. Cook the Mushrooms: Heat 1 teaspoon oil in the empty pan over medium-high heat. Add marinated mushrooms in a single layer and cook about 1 minute per side until caramelized. Transfer to the noodle bowl without mixing.
  10. Cook the Beef: Heat 1 tablespoon oil in the same pan over medium-high heat until very hot. Add marinated beef in a single layer and cook for about 45 seconds per side until just cooked through. Transfer beef to noodle bowl without mixing.
  11. Final Touches: Slice the cooked egg whites and yolks into thin matchsticks. Add them to the noodle bowl along with toasted sesame seeds. Toss everything gently to combine. Serve warm or at room temperature. Enjoy your flavorful homemade Japchae!

Notes

  • Be careful not to overcook the noodles; they should be chewy and springy, not mushy.
  • Cut noodles after cooking to make them easier to eat and mix.
  • The dish is traditionally eaten warm or at room temperature, not piping hot.
  • You can substitute the beef with thinly sliced chicken or tofu for a different protein option.
  • Use neutral high smoke point oils like canola or vegetable oil for stir-frying components to avoid burning.
  • Gochujang adds mild spiciness and depth; adjust quantity based on your heat preference.
  • Prepare all vegetables sliced and ready before cooking for an efficient workflow.
