Savor the classic comfort of this best pot roast crock pot recipe. Featuring a tender chuck roast slow-cooked with hearty vegetables, this dish delivers melt-in-your-mouth goodness perfect for cozy evenings. With minimal prep and maximum flavor, it’s a meal that will have your family and friends clamoring for seconds.

  • Total Time: 8 hours 15 minutes
  • Yield: Serves approximately 8 people

Ingredients

Meat

  • 3 to 4 lbs chuck roast

Vegetables

  • 4 large carrots, chopped
  • 4 medium Yukon Gold potatoes, quartered
  • 1 large onion, sliced
  • 4 cloves garlic, minced

Liquids & Seasonings

  • 2 cups low-sodium beef broth
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 tsp fresh rosemary (or 1 tsp dried)
  • Salt and pepper to taste

Instructions

  1. Prepare vegetables: Chop the carrots and potatoes into large chunks. Slice the onion thinly and mince the garlic cloves to ensure they cook evenly and release maximum flavor.
  2. Season the roast: Generously season both sides of the chuck roast with salt and pepper to enhance the natural flavors of the meat.
  3. Sear the roast: Heat a skillet over medium-high heat and sear the roast for 3-4 minutes per side until a rich brown crust forms, locking in juices and flavor.
  4. Layer ingredients in crock pot: Place the seared roast at the bottom of your crock pot. Arrange the chopped carrots, potatoes, sliced onion, and minced garlic around and on top of the roast. Sprinkle thyme and rosemary evenly over the vegetables and meat.
  5. Add broth: Pour in enough beef broth to cover the vegetables but leave part of the roast exposed to avoid over-saturating the meat.
  6. Cook slowly: Cover and cook on the low setting for 8 hours, or on high for 4 hours, until the meat is tender and falls apart easily with a fork.

Notes

  • For best flavor, searing the meat before slow cooking is highly recommended.
  • You can substitute fresh herbs with dried herbs at half the quantity.
  • Adjust salt and pepper according to your taste, especially if using broth that’s not low sodium.
  • This recipe is perfect for meal prepping as leftovers taste even better the next day.
  • For a thicker gravy, remove the roast and vegetables at the end and simmer the broth on high until reduced.
