Ingredients
For the Potatoes:
- 1 tbsp olive oil
- 2 lbs russet potatoes, peeled and diced small
- ½ white onion, diced
- 2 cloves garlic, minced
- ¼ cup chicken broth
- ½ tsp paprika
For the Burger Meat:
- 2 lbs lean ground beef
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1.5 tsp salt
- ½ tsp pepper
Remaining Ingredients:
- 1 cup shredded cheddar cheese
- 1 cup cherry tomatoes, halved
- 1.5 cups shredded lettuce
- ½ cup dill pickle chips
- ½ cup diced white onion
- 1 batch Big Mac Sauce (recipe not included)
Instructions
- Preheat oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
- Cook potatoes and aromatics: Heat olive oil in a large skillet over medium-high heat. Add diced white onion and minced garlic, stirring for 2-3 minutes until fragrant. Add diced potatoes, paprika, and chicken broth, cooking for 10-15 minutes while stirring often until the potatoes are browned and softened.
- Assemble potato base: Transfer the cooked potatoes, onions, and garlic mixture to the bottom of a 9×13 inch casserole dish.
- Cook the ground beef: In the same skillet, cook the lean ground beef with onion powder, garlic powder, paprika, salt, and pepper, stirring and breaking up the meat until fully cooked through and browned.
- Add beef layer: Spread the cooked seasoned ground beef evenly over the potato layer in the casserole dish.
- Top with cheese and bake: Sprinkle shredded cheddar cheese over the beef layer. Place the casserole in the preheated oven and bake uncovered for 15 minutes, or until the cheese is melted and bubbly.
- Prepare toppings and sauce: While the casserole bakes, prepare your Big Mac Sauce and slice the cherry tomatoes, dice remaining white onion, and shred the lettuce if not already done.
- Add fresh toppings: Remove the casserole from the oven and promptly top with shredded lettuce, halved cherry tomatoes, dill pickle chips, diced white onion, and drizzle with Big Mac Sauce to finish.
Notes
- You can prepare the Big Mac Sauce ahead of time to save time.
- Ensure the potatoes are diced small and cooked thoroughly so they soften during skillet cooking.
- Feel free to adjust seasoning according to taste, especially salt and paprika levels.
- This casserole is best served immediately but can be refrigerated and reheated later.
- Use lean ground beef to reduce excess grease in the dish.
- If you prefer a spicier kick, add a pinch of cayenne to either the potato or beef seasoning.
