This Birthday Cake Biscotti recipe combines the classic crunch of biscotti with festive sprinkles and a sweet white chocolate topping. Perfect for celebrations, these twice-baked cookies are buttery, lightly sweetened, and adorned with colorful sprinkles to bring a fun and tasty treat to any birthday party or special occasion.

  • Total Time: 55 minutes
  • Yield: 20 servings

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 cup sprinkles (divided)

Wet Ingredients

  • 6 tablespoons unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon butter flavoring

Topping

  • 6 ounces Ghirardelli white chocolate melting wafers

Instructions

  1. Prepare the Dough: In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is creamy and smooth. Then add the eggs and butter flavoring, continuing to beat until well combined and fluffy.
  2. Combine Dry Ingredients: Add the all-purpose flour and baking powder to the wet ingredients and beat until just combined. Gently fold in 2 tablespoons of the sprinkles to incorporate some festive color into the dough.
  3. Shape the Dough: Line a large baking sheet with parchment paper or a Silpat baking mat. Divide the dough evenly in half. Using floured fingertips to prevent sticking, shape each half into a rectangle approximately 10 inches long and 2.5 inches wide on the baking sheet.
  4. First Bake: Preheat the oven to 350°F (175°C). Bake the dough rectangles for 25 minutes until they are set and lightly golden. Remove from the oven and let them cool for 10 minutes to firm up for slicing.
  5. Slice and Arrange: Using a serrated knife, cut each rectangle into 9 to 10 slices about 1/2 inch thick. Stand each slice on its side on the baking sheet to prepare for the second bake, which will crisp them up.
  6. Second Bake: Return the slices to the oven and bake for 10 minutes. Then flip each biscotti onto the opposite side and bake for an additional 8 to 10 minutes until golden brown and crisp. Remove and cool completely on a wire rack.
  7. Melt Chocolate and Decorate: Meanwhile, melt the Ghirardelli white chocolate melting wafers according to package instructions. Once the biscotti have cooled, dip the tops into the melted white chocolate and immediately sprinkle the remaining sprinkles on top for a fun, colorful finish. Allow the chocolate to set before serving.

Notes

  • Butter flavoring is optional but adds a rich, buttery aroma reminiscent of birthday cake.
  • Use a serrated knife to ensure clean biscotti slices without crumbling.
  • Allow biscotti to cool completely before dipping in chocolate to prevent melting.
  • Store biscotti in an airtight container to maintain crunchiness for up to two weeks.
