Ingredients
Blackberry Sauce
- 1 pound (454g) blackberries (fresh or frozen)
- 1 cup (200g) granulated sugar
- 1 cup (240mL) water
- 1 Tablespoon (15mL) lemon juice
- ½ teaspoon ground cinnamon
- ½ teaspoon vanilla extract
Dumplings
- 2 cups (240g) sifted flour
- 3 teaspoons baking powder
- ½ teaspoon ground cinnamon
- ½ teaspoon salt
- ¼ cup (50g) granulated sugar
- 6 Tablespoons (85g) unsalted butter (cold and cut into pieces)
- ¾ cup (180mL) buttermilk
- ½ teaspoon vanilla extract
Instructions
- Prepare Blackberry Sauce: In a 9″ or 10″ cast iron skillet or a cooking skillet, combine the blackberries, sugar, water, lemon juice, ground cinnamon, and vanilla extract. Stir to combine all ingredients thoroughly.
- Simmer the Mixture: Place the skillet on medium heat and allow the fruit mixture to come to a gentle simmer while you prepare the dumpling dough.
- Mix Dry Ingredients for Dumplings: In a medium bowl, whisk together the sifted flour, baking powder, ground cinnamon, salt, and sugar to ensure even distribution of the leavening agents and spices.
- Incorporate Butter: Add the cold, cubed unsalted butter to the flour mixture. Use a pastry blender to cut the butter into the flour until the mixture resembles coarse, uneven crumbs about the size of peas, which helps create a tender texture.
- Add Wet Ingredients: In a separate container, mix the vanilla extract into the buttermilk. Pour this mixture evenly over the flour and butter blend, then stir gently just until the dough comes together and is shaggy, being careful not to overmix.
- Form Dumplings and Cook: Drop spoonfuls of the dumpling dough by tablespoonfuls (a #50 cookie scoop works well) evenly over the simmering blackberry sauce in the skillet.
- Cover and Simmer: Cover the skillet with a lid or foil and reduce the heat to low. Let the dumplings simmer for 12-14 minutes until cooked through; the internal temperature should reach at least 195ºF (91ºC). Avoid removing the cover to keep the steam in, which is critical for proper cooking and moisture retention.
- Serve and Store: Once cooked and the blackberry sauce has thickened, remove from heat and let cool slightly. Serve hot in bowls topped with ice cream or whipped cream as desired. Leftovers can be stored in the fridge covered for up to 4 days or frozen up to 3 months. Reheat individual servings in the microwave.
Notes
- Use fresh or frozen blackberries based on availability; frozen blackberries work well and add convenience.
- A cast iron skillet is ideal for even heat distribution but any heavy-bottomed skillet will work.
- Do not peek while the dumplings are cooking to ensure they steam properly and cook all the way through.
- Test dumplings for doneness with a thermometer to avoid undercooking the batter.
- To store leftovers, freeze in airtight containers and thaw in the refrigerator before reheating.
