Delicious Blueberry Crumb Bars featuring a buttery crumb crust, a creamy blueberry filling, and a crispy crumb topping. Perfect for a sweet snack or dessert, these bars combine tangy blueberries with a rich, crumbly texture in every bite.

  • Total Time: 1 hour 10 minutes
  • Yield: 16 servings

Ingredients

Crust and Crumb Topping

  • ¾ cups all purpose flour
  • ¼ cup sugar
  • Pinch salt
  • 6 tablespoons cold butter, cut into cubes

Filling

  • 1 large egg
  • ½ cup sugar
  • 2 ½ tablespoons all-purpose flour
  • ¼ cup sour cream
  • Pinch salt
  • 1 ½ cups frozen blueberries

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Spray a 9×9 inch baking dish with cooking spray to prevent sticking.
  2. Make Crumb Mixture: In a large bowl, whisk together ¾ cup flour, ¼ cup sugar, and a pinch of salt. Add the cold cubed butter and mix until the mixture becomes crumbly. Reserve ½ cup of this crumb mixture for the topping.
  3. Form Crust and Bake: Pour the remaining crumb mixture into the prepared pan and press firmly to create an even crust covering the entire bottom. Bake for 15 minutes until set.
  4. Prepare Filling Mixture: In another bowl, whisk together the egg, ½ cup sugar, 2 ½ tablespoons flour, sour cream, and a pinch of salt until smooth. Do not add blueberries yet.
  5. Add Blueberries and Assemble: Once the crust is done, gently fold the frozen blueberries into the filling mixture. Spoon this filling evenly over the baked crust. Then, crumble the reserved crumb mixture evenly over the filling.
  6. Bake Final Bars: Bake the assembled bars for 40 to 45 minutes or until the top is lightly browned and the filling is set. Allow bars to cool completely before cutting into 16 squares and serving.

Notes

  • Using frozen blueberries helps maintain a firmer texture and prevents excess moisture in the filling.
  • Press the crust mixture firmly for a sturdy base that holds the filling well.
  • Cool bars completely before slicing to ensure clean cuts and prevent crumbling.
  • Optionally, dust with powdered sugar before serving for added sweetness and presentation.
  • Store bars in an airtight container in the refrigerator for up to 5 days.
