Ingredients
Chicken and Marinade
- 2 lbs chicken breast, cut into 3/4″ wide pieces
- 3/4 cup mayonnaise
- 1 tsp Mrs. Dash seasoning blend
- 1 tsp fine sea salt
- 1/2 tsp freshly ground black pepper
Breading and Cooking
- 1 cup Italian-style breadcrumbs (or gluten-free breadcrumbs)
- Extra light olive oil or canola oil, enough to generously cover the bottom of the pan for frying
- 12 small wooden skewers
Instructions
- Prepare the Chicken and Marinade: Cut the chicken breast into 3/4″ wide pieces and place them in a large mixing bowl. Season with the salt, freshly ground black pepper, and Mrs. Dash seasoning. Add 3/4 cup of mayonnaise and mix thoroughly to coat all the pieces. Cover and refrigerate for at least 1 hour or overnight to marinate and enhance flavor.
- Skewer the Chicken: Thread the marinated chicken pieces onto the 12 small wooden skewers, aligning the flat sides in the same direction to ensure even cooking across each skewer.
- Bread the Skewers: Pour the Italian-style breadcrumbs onto a large plate or shallow dish. Roll each chicken skewer in the breadcrumbs carefully until evenly coated on all sides.
- Pan Fry the Skewers: Heat a large nonstick pan over medium heat and add enough oil to generously cover the bottom. Place the breaded chicken skewers into the hot oil and sauté for about 3 minutes per side. Flip them carefully until the breadcrumbs turn golden brown and the internal temperature of the chicken reaches 165°F (74°C) when checked with an instant-read thermometer.
- Drain and Serve: Once cooked, transfer the skewers to a paper towel-lined platter to absorb excess oil. Serve warm and enjoy this crispy, juicy chicken appetizer or main dish.
Notes
- For a gluten-free option, substitute Italian-style breadcrumbs with gluten-free breadcrumbs.
- Marinating the chicken overnight enhances the flavor and tenderness.
- Ensure the internal temperature reaches 165°F to guarantee the chicken is safely cooked.
- Use wooden skewers soaked in water for 30 minutes to prevent burning if cooking on grill instead of pan.
- Serve with a side of dipping sauce like ranch, honey mustard, or a spicy aioli for extra flavor.
