Ingredients
Base Biscuit:
- 1 + ¾ cups plain 2% Greek yogurt
- 4 eggs
- 2 + ½ cups all purpose flour
- ¼ cup ground flaxseed
- 1 teaspoon garlic powder
- ½ teaspoon red pepper flakes
- 1 tablespoon baking powder
- 2 teaspoons salt
Ham, Cheese & Chive Variation:
- 1.5 cups spinach, chopped
- ½ cup chives, finely diced
- 1.5 cups cheddar cheese, shredded (divided)
- 2 cups cooked ham, diced
Mediterranean Sausage Variation:
- ½ cup sun dried tomatoes, chopped
- 2 cups Italian chicken sausage, cooked and removed from casing
- 1.5 cups feta cheese
- 1.5 cups spinach, chopped
- 2 teaspoons dried basil
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper to prevent sticking and for easy cleanup.
- Mix Wet Ingredients: In a medium mixing bowl, whisk together the Greek yogurt and eggs until well combined and smooth.
- Mix Dry Ingredients: In a separate medium bowl, combine the all-purpose flour, ground flaxseed, garlic powder, red pepper flakes, baking powder, and salt thoroughly.
- Combine Dry and Wet: Gradually add the dry ingredients into the wet ingredients, stirring well to form a cohesive dough.
- Add Mix-ins: Incorporate your choice of mix-ins, including vegetables, herbs, cooked meat, and 1 cup of cheese (for Ham, Cheese & Chive variation: spinach, chives, ham, and cheddar; for Mediterranean Sausage variation: sun dried tomatoes, Italian chicken sausage, spinach, basil, and feta). Mix until evenly distributed, using your hands if necessary to fully incorporate.
- Shape Biscuits: Lightly flour your hands and divide the dough into 12 equal portions, shaping each into round discs about 1 inch thick, using approximately ⅓ cup of batter per biscuit. Place the biscuits evenly spaced on the lined baking tray(s).
- Add Topping: Sprinkle the remaining cheese on top of each biscuit to create a golden cheesy crust when baked.
- Bake: Bake in the preheated oven at 400°F for 5 minutes to start. Then reduce the temperature to 350°F (175°C) and bake for an additional 20 minutes without opening the oven door during this time.
- Check for Doneness: Once the bottoms are golden brown and the tops just begin to brown, the biscuits are ready to be removed from the oven. Let them cool slightly before serving.
Notes
- Feel free to customize the mix-ins with your favorite cheeses, meats, and vegetables.
- Make sure not to open the oven door during the second part of baking to maintain even rising and browning.
- If using two trays, rotate them halfway through baking for even cooking if your oven requires it.
- Store leftover biscuits in an airtight container in the refrigerator for up to 4 days or freeze for longer storage.
- Lightly flouring your hands prevents the dough from sticking when shaping biscuits.
