Ingredients
Main Ingredients
- 1 small yellow onion
- 3-4 cloves garlic
- 4 cups broccoli florets
- 1 Tbsp. freshly grated ginger
- 1 cup roasted cashews
- 2-3 Tbsp. tamari
- 1 tsp. sesame seeds (or more)
For Serving (optional)
- Brown rice, quinoa, noodles, etc.
Instructions
- Prepare grains: Begin by cooking your rice or quinoa according to package instructions if you plan to serve the stir-fry with it. Alternatively, cook it ahead of time so it’s ready when your stir-fry is done.
- Slice onions: Thinly slice the small yellow onion to ensure even cooking and maximum flavor extraction.
- Sauté onions: Heat a large skillet over medium-high heat and add about 3 tablespoons of water or vegetable broth for a no-oil sauté. Add the sliced onions and cook for 8-10 minutes until translucent, stirring occasionally. Add more liquid as necessary to prevent sticking.
- Prepare aromatics and broccoli: While the onions cook, mince the garlic cloves and grate the fresh ginger using a microplane grater if available. Cut the broccoli into bite-sized florets for quick and even cooking.
- Add garlic, ginger, and broccoli: Once the onions are translucent, add minced garlic, grated ginger, and broccoli florets to the skillet and stir to combine all ingredients.
- Steam broccoli: Pour in 1/4 cup of water or vegetable broth and cover the skillet. Let the broccoli steam for 5 minutes, stirring occasionally. Monitor the pan and add more liquid if necessary to keep the broccoli from drying out or sticking to the pan.
- Add cashews and seasoning: After the broccoli has softened to your liking, stir in the roasted cashews, 2 tablespoons of tamari (add more to taste if desired), and the sesame seeds. Mix well to evenly coat all ingredients.
- Finish cooking: Continue to cook the mixture for an additional 2-3 minutes until the broccoli reaches your preferred tenderness and the flavors meld together.
- Serve: Serve your broccoli cashew stir-fry hot over a bed of warm brown rice, quinoa, or noodles, and enjoy a wholesome, flavorful meal.
Notes
- Use vegetable broth instead of water for added flavor while sautéing and steaming.
- Adjust tamari quantity to your preferred level of saltiness; start with less since tamari is salty.
- This dish can be customized with additional veggies like bell peppers or snap peas if desired.
- To keep the recipe oil-free, replace oil with water or broth when sautéing.
- For a gluten-free version, ensure tamari sauce is certified gluten-free.
- Serve immediately for best texture; leftovers can be reheated gently on the stovetop.
