Ingredients
Vegetables and Aromatics
- 2 Tbsp Butter
- 1/2 Cup Onion, diced
- 1 Cup Carrots, diced (about 2 carrots)
- 1/2 Cup Celery, diced
- 1 Tbsp Minced Garlic
- 1 1/2 Cups Potatoes, diced (about 2 medium)
- 2 Large Heads of Broccoli, florets only
Liquids and Broth
- 3 Cups Chicken Broth
- 3/4 Cup Milk
- 2 Tbsp Water
Thickening and Seasoning
- 2 Tbsp Flour
- 3 Cups Sharp Cheddar Cheese, shredded (use block cheese, not pre-shredded)
- Salt and Pepper to taste
- 1/4 tsp Nutmeg
Instructions
- Sauté Vegetables: Melt 2 tablespoons of butter in a large soup pot over medium heat. Add diced onion, carrots, and celery, and cook, stirring occasionally, until the vegetables are tender, about 8-10 minutes.
- Add Garlic and Broth: Stir in the minced garlic and cook for about 1 minute until fragrant. Pour in 3 cups of chicken broth and add the diced potatoes. Bring the mixture to a gentle boil, then reduce heat and simmer until the potatoes are tender, approximately 10-15 minutes.
- Thicken the Soup: In a small bowl, whisk together 2 tablespoons of flour with 2 tablespoons of water to create a slurry. Slowly stir this mixture into the soup and simmer until the soup thickens slightly. Then, add the milk and the broccoli florets, cooking until the broccoli is al dente—tender but still retaining some firmness, about 5-7 minutes.
- Add Cheese: While the soup is still piping hot, gradually stir in the shredded sharp cheddar cheese one cup at a time, stirring continuously until fully melted and incorporated into the soup.
- Season and Serve: Season the soup with salt, pepper, and nutmeg to taste. Give it a final stir and serve hot, enjoying the creamy, cheesy goodness.
Notes
- Using block cheddar cheese instead of pre-shredded cheese helps the cheese melt more smoothly and avoids clumping.
- Do not overcook the broccoli to prevent it from becoming mushy; al dente texture keeps the soup fresh and vibrant.
- For a vegetarian version, substitute chicken broth with vegetable broth.
- This soup can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop or microwave.
